Beans are awesome! Not only are they wonderful sources of several nutrients and great-for-you fiber, but they are so versatile and tasty, too. No matter what type of beans you choose, you can be sure that they are going to add delicious and nutritious volume to your meal.

The fact that beans come in such a wide variety adds to their appeal, as does the many exciting ways in which you can prepare them. Versatile beans are the focus of these tasty, quick and easy recipes. Give one, a few or all of them a try and you’re sure to find some pretty pleasing additions to your meal time ideas.

Beef and bean taco


1. Beef and Bean Taco Salad

Get kids involved in this meal by setting up an assembly line at the end! Sauté ground beef until browned then add salsa and black beans. Let it cook until most of the liquid has evaporated and set it aside. Warm the tortillas by shaping them over inverted ramekins and placing them in a pre-heated oven. Put the tortillas to stand on their own right side up (like cups) and warm them some more until browned. Set the tortillas aside as well. Gently toss together some chopped tomatoes, fresh cilantro and fresh lime juice with olive oil. Set it aside, too. Mix together some sour cream and adobo sauce and get that assembly line ready to build your tacos. Place a lettuce leave in a tortilla “bowl”, add the beef mixture, sprinkle with Mexican cheese blend. Top each taco with the avocado and sour cream mixtures. Olé!!

2. Skillet Bruschetta with Beans and Greens

This lovely bruschetta recipe comes together quickly and is packed full of flavor. Start by brushing both sides of the bread with oil and placing it in a hot skillet. Season each slice with salt and pepper. Sauté garlic and pepper flakes in hot oil and then stir in the beans and let them cook until they begin to blister. Lightly mash the beans then add some kale and vegetable broth. Let it cook until the kale is wilted then add some fresh lemon juice, salt and pepper. Serve over toast with a drizzle of oil. A simple and good start to dinner.

3. Bean Relish

8 simple ingredients, 10 minutes and whole lot of YUM! Mix together beans, garlic, onion, sweet relish and mayonnaise. Season it with salt, white pepper and dry mustard then mix some more. Refrigerate and serve. It’s the perfect addition to any meal.

4. Swiss Chard and Chickpea Fritters With Yogurt

Everyone will LOVE these lip-smacking fritters. Place chickpeas, cumin, garlic, Swiss chard, salt and pepper in a food processor and pulse them until finely chopped. Transfer the mixture to a bowl and add crumbled Feta cheese and flour. Mix them all together and form into patties. Fry the patties in heated oil until brown. Try these with spinach instead of the Swiss chard for an easy change up.

5. Red lentil, Chickpea and Chilli Soup

This hearty soup is spiced with chilli flakes for some added warmth on those chilly days. Dry-fry cumin seeds and chilli flakes to release their aroma. Add olive oil and sauté onion before stirring in some split lentils, tomatoes and vegetable stock. Allow it to boil then reduce it to a simmer until the lentils soften. Blend the mixture to the consistency of a rough purée and add in the chickpeas. Heat it some more, then add seasoning and coriander leaves. Serve with a dollop of Greek yogurt and a sprinkle of more coriander leaves. Enjoy!

6. Summer Squash & White Bean Saute

Here is a wonderful way to incorporate beans with your vegetables. Sauté garlic and onion then add in summer squash, zucchini, salt, pepper and chopped fresh oregano. Give it a stir, reduce the heat and cook until tender-crisp. Add cannellini beans, chopped tomatoes and red wine vinegar. Stir some more and allow it to heat through before removing the pan from the heat. Stir in some Parmesan cheese and serve. As beautiful to look at as it is to taste!

7. Red Beans and Rice

Incorporating red beans with your rice is a common dish in many cultures. Here is a lovely take on that idea. Sauté onion, garlic, red bell pepper and celery in olive oil until they are tender. While stirring, add red kidney beans, hot pepper sauce, onion powder, salt and pepper. Allow it to simmer on low. For the rice, boil chicken stock and stir in white rice with some butter. Return it to a boil before lowering the heat. Cover and cook. Once done, remove it from the heat and set it aside for a few minutes. Gently blend in the bean mixture into the rice and serve with a garnish of cilantro. A very pleasing dish, indeed!

8. Easy Chicken and Beans

Start with leftover chicken, if you have it, and this dish is CRAZY quick! Cook 1-inch pieces of chicken in hot oil until its center is no longer pink. Add some whole kernel corn (with green and red peppers), black or pinto beans and chili powder. Stir, allow it to heat through and you’re done! Serve it up with some salsa and flour tortillas to complete the Mexican theme of this dish. Too easy!

9. Black Bean and Tortilla Bake

Cook together some green onion, garlic, onion, tomatoes, chili powder and cumin. Add tomato sauce and cook for a few more minutes before stirring in black beans, cilantro, salt and pepper. Layer tortillas in a greased baking dish and cover with shredded cheddar cheese and the bean mixture. Add two more layers of tortillas then cheese then beans. Top the final layer with more shredded cheese. Cover and bake until bubbly, uncovering the dish for the final 10 minutes.

10. Cauliflower Puree with Green Beans and Lemon Thyme Butter

Have your steamed round green beans ready – you’re in for a treat! Soften garlic and thinly sliced leek in a pan of heated oil and butter. Add cauliflower, milk and chicken stock. Allow it to boil, cover it and reduce it to a simmer, stirring occasionally until the vegetables are tender. Drain all but a little of the liquid then season and blend the mixture until smooth. Set it aside. Heat some butter until golden brown then stir in some lemon juice and lemon thyme. Pour the cauliflower mixture onto a serving platter, place the steamed beans on top and spoon the butter sauce all over. Yummy!
