In this dish, you can call it courgette, zucchini or just plain yummy! Start by boiling the lasagne until just soft. Drain it, add a drizzle of oil and set it aside. Sauté the onion, courgette and garlic until the courgette is softened and bright green. Stir in ricotta and cheddar cheeses and season it to taste. Heat up the tomato sauce and start layering your baking dish with lasagne, cheese mix and the sauce. Top with more ricotta and cheddar and bake in a preheated oven. Get ready to serve up some creamy, cheesy, courgettey fun!

This dish lets your family enjoy all the tasty benefits of super nutritious kale. Scramble eggs and set them aside. Stir fry onion, garlic and your choice of bell pepper, carrots and Brussels sprouts. Add the kale and salt then cook until the kale is tender. Set these aside with the eggs. Stir fry the coconut flakes and add cooked rice to heat through. Stir in the eggs, kale mixture, some tamari and hot sauce. Serve with a squeeze of lime juice and garnish with cilantro leaves and lime slices. Some chili garlic sauce, sriracha and red pepper flakes make the perfect accompaniments. Wonderfully good!

You can tell from the ingredients list that this is a really spicy dish. Boil the lentils with bay leaves and cinnamon then remove the spices and set the lentils aside. Sauté onion and garlic with turmeric, garam masala, cumin and chili flakes. Stir in lemon juice and season with salt. Add the lentils and cook for a while before removing from the heat to stir in a little coriander. Hot naan bread or papadums complete this East Indian treat!

Serve your family this Mexican inspired dish with guacamole and chips then watch it simply disappear!

Okay. So, this basically the same idea as the previous recipe but check out the different flavors and the final preparation – you’ll love it, too! Sauté the garlic and onion until the onion has softened. Add the beans and mash them leaving about half intact. Add the cumin, tomato sauce, chili powder, green chilies, salt and pepper then leave it to simmer and thicken. Fill the tortillas one at a time with the bean mixture and fold them up carefully. Place the filled tortillas seam side down in a baking dish , sprinkle some Monterey Jack cheese over them, cover with foil and bake in a preheated oven. When cooked, sprinkle the tortillas with green onions and serve them with salsa and sour cream. Good, right?

Here is an appetizing vegan dish that suits every taste. Sauté onion and garlic until caramelized, seasoning them with garlic powder, cumin and salt. Set them aside and keep warm. Sauté the mushrooms and add a dash of steak sauce if you wish. Set them aside as well. Make guacamole with avocados, lime juice and salt adding in some cilantro and onion if you like. Top warmed tortillas with the mushrooms, peppers and onion, guacamole and other vegan toppings such as salsa. Since your mouth will always be full, a satisfied thumb’s up will do!

Thai Pineapple Fried Rice

The best word to describe the finished dish is “juicy!” Lightly scramble eggs and set them aside. Sauté pineapple and red pepper in a little oil to caramelize the pineapple. Add green onion and garlic, stir until fragrant and set aside with the eggs. Sauté the cashews in oil and then add the rice. Stir to combine until the rice is heated through. Add in the eggs and pineapple mixture to warm through as well and then remove from the heat. Tamari and chili garlic are added next, with a squeeze of lime juice and a little salt. Serve garnished with cilantro leaves. Offer chili garlic sauce or sriracha on the side. Like I said – “juicy!”

Sauté garlic and add tomatoes and spinach, letting the spinach wilt. Add the pasta to the spinach and toss before stirring in the cheese, salt and pepper to season, and the reserved pasta water. Serve and enjoy!

Here’s a great way to get kids to eat up their greens. Cook the gnocchi in a little oil until they are plump and starting to turn brown. Remove them and set them aside. Sauté onion then add in some garlic and water. When the onion is soft, add the chard and let it wilt. Stir in beans, tomatoes and pepper and allow it to simmer before stirring in the gnocchi. Sprinkle Parmesan and mozzarella cheeses on top, cover the pot and cook until the cheeses melt and the sauce is bubbly. A lovely pasta dish with a difference!
