Simple, yummy and also very yummy - too many yummys? No chance! This had me swooning like an Edwardian lady with a new extra-slimming corset. It's called a mousse cake but it could also be called a no-bake cheesecake.


As it's a cheese cake with UK origins the recipe calls for McVitie's Digestive Biscuits, if those aren't immediately available to you one of the best alternatives are Carr's whole wheat cracker (McVitie's Digestives are available in the US at Amazon
Making the cake involves crushing the biscuits and mixing with melted butter to form the base then refrigerating for half an hour to make it solid. Blast some of the strawberries, add cream and soft cheese before combining with some melted chocolate and pouring the mixture onto the base. Leave it to chill overnight, then use the remaining chocolate and strawberries to beautify it. Deliciousness!

This is a deliciously simple 4-ingredient mousse. All you need is pureed strawberries, powdered sugar (aka icing sugar), vanilla extract and whipping cream.

The recipe suggests strawberry sauce but pureeing fresh strawberries is better, best to do that first so you're ready to add them later. Whisk the whipping cream until it's forming strong peaks then add the sugar and vanilla. Once that's mixed in, we just fold the strawberry puree in gently so the cream doesn't over mix or begin to fall.
That's the main job done, all that's left is adding the mousse to glasses or bowls and cooling for an hour. Then it's up to you to tune into your inner Salvador Dali and decorate with a flourish.

Hull the strawberries, pop them in your bowl and add sugar, almonds and vanilla extract. Then prepare the crumble mixture by rubbing butter into a mixture of flour and baking powder. Add the crumble on top of the strawberry mix, flatten it down a bit and make sure the covering is equal then pop it in a pre-heated oven for about 30 minutes or until the crumble has turned a delicious golden brown. Take out and cool and that is it, simple!

Once the ingredients are properly liquefied just pour them into a popsiclemold insert a stick and place them in the freezer for a couple hours. Apples fritters are like dessert, but some people have them for breakfast. They are sweet yet tangy, and soft. These fritters are easy to make with exceptional results.

Makes: 10
Prep Time: 10 minutes
Cooking Time: 7 minutes
Total Time: 17 minutes


2 large apples, Granny Smith or other tart variety
240g / 2 cups flour
65g / ⅓ cup sugar
15ml / 1 tablespoon baking powder
5ml / 1 teaspoon salt
5ml / 1 teaspoon ground cinnamon
1.25ml / ¼ teaspoon nutmeg
2 large eggs
30g / 2 tablespoons butter, melted
180ml / ¾ cup apple cider

200g / 2 cups confectioner’s sugar
60ml / ¼ cup apple cider
1.25ml / ¼ teaspoon nutmeg
5ml / 1 teaspoon ground cinnamon
Oil for frying


In a large shallow pan, heat 700ml / 3 cups vegetable oil to 177°C / 350°F on medium-high heat.
Glaze: Mix confectioner’s sugar, cider, cinnamon and nutmeg. Set aside.
In a bowl, mix dry flour, sugar, powder, salt, cinnamon and nutmeg.
Chop peeled apples into ½cm / ¼” cubes. Add to dry ingredients and toss. Whisk 2 eggs and melted butter, then add cider. Mix until incorporated.
Measure 80ml / ⅓ cup portions of batter and drop into the oil. Only do five fritters at a time. With a large spoon, press the center down to flatten a little so the fritters are of equal thickness. Cook the fritters for 3 to 4 minutes, or until nicely browned. Flip and fry other side for 3 minutes.
Drain on a paper towel-lined baking sheet. Drizzle 15ml / 1 tablespoon of glaze over each fritter.
Cool before eating, about 10 minutes.

Blueberry pancakes are some of the most popular around. Granted, there are other fruits less commonly used, such as apples, strawberries, bananas, dates and raisins. But the blueberry is by far the favorite.

These blueberry pancakes are made light and delicious. And what’s more, they are a nutritious and flavorful breakfast. Serve by themselves or with maple syrup or honey.

Cooking Time: 4 minutes
Total Time: 14 minutes


2 eggs, separated
11ml / 2¼ teaspoons baking powder
180g / 1½ cups flour
240ml / 1 cup milk
38g / 3 tablespoons sugar
45g / 3 tablespoons butter, melted
3.75ml / ¾ teaspoon salt
150g / 1 cup blueberries, rinsed


In a small bowl, beat egg whites them until they are stiff, set aside.
In a large bowl, sift flour, baking powder, salt and sugar. Add milk and melted butter. Fold in the egg whites. Stir well but do not over-mix.
Heat and oil a skillet or griddle. Cook the pancakes until bubbles start to form and edges turn light brown. Flip and cook the other side.
Serve hot.

Note: Fresh or frozen blueberries are equally good.
