Not sure why, but there something about a poached egg that just simply says “sophistication”. Seems like you can turn a simple homemade breakfast into fancy restaurant-worthy fare merely by swapping out your fried egg for a poached one instead!

Mighty tasty Canadian bacon and yummy hollandaise sauce make this quick and classic breakfast a delight! Fry the bacon and set it aside, then poach the eggs in 3 inches of boiling water with a little vinegar. Remove them after 3 minutes and set them aside. Melt some butter and get ready to make the sauce. Blend together egg yolks, cayenne pepper, salt and heavy cream adding half of the hot butter. Next in are lemon juice and the remaining butter. Top your English muffin with bacon, a poached egg and a drizzle of sauce. Breakfast is served!

You can simplify this dish a bit by doing just one thing at a time – for example, the fritters then the dressing and then the eggs. Mix together the spring onions, paprika, flour, courgette (zucchini), milk, beaten egg, sweetcorn and seasoning. Set it aside, put the poaching water on to boil and prepare the dressing using chilli sauce and lime juice. Add the fritter mixture a spoonful at a time to heated oil and cook until golden brown. While they are cooking set the eggs to poach in simmering water for about 3 minutes. To serve, top each fritter with a poached egg, some mixed salad leaves and a drizzle of the dressing. Sweet and filling!

8. Deep Fried Poached Egg Over Heirloom Tomato

Some might feel the poaching method in this dish is easier to master. Have a bowl of iced water and pan lined with paper towels ready. Boil some water, remove the pot from the heat, add the eggs, cover the pot and set it aside for three minutes. Carefully remove the eggs and place them in the iced water before transferring them to the paper towels. Set up an “assembly line” of flour in a shallow dish, beaten eggs in a bowl and a bowl of panko seasoned with salt and pepper. Carefully coat each poached egg with flour, then with beaten egg, then with panko and set it aside. Fry each coated egg until golden brown. Serve by topping a seasoned slice of tomato with an egg. This is another of those delicious titles that gets my saliva buds saliving*. It may just be the mention of poached eggs or it may be too close to lunch time but I need to eat this now! 

You can use ready-made pizza dough or use the flatbread trick from the previous recipe to form the base. If you do use the flatbread trick remember not to cook for as long.

Start cooking the base then add the cheese and return to the oven. Cook your poached egg as you like it and toss the arugula with the rest of the ingredients. Then just take out your base and top with the arugula and egg. Delicious!
