Many sandwiches feature cheese and meat but this one goes deliciously over the top. Fire up the grill and grab some slices of sourdough bread then begin “building” your sandwich. Put the two halves together and grill your sandwich, brushing each side with melted butter. If you take this to the office for lunch, you most certainly will NOT be dining alone!

Whisk together balsamic vinegar, mustard and some more olive oil. Before you arrange the sandwich, use this dressing on the bottom slice of ciabatta. Layer on baby spinach, artichoke hearts, red bell peppers, prosciutto, basil, mozzarella and red onion, then drizzle on more dressing and top with the other slice of bread. Use baking parchment to wrap your sandwich and string to secure it. Leave your wrapped sandwich in the fridge overnight weighed down by a loaded tray. When you’re ready to eat, just slice and serve!
