Antipasto Tray

Ingredients:

¼ pound good-quality salami
¼ pound shaved Parmesan cheese
¼ pound prosciutto
¼ pound Provolone cheese
¼ cup roasted red peppers, drained
½ cup olives, drained


Directions:

-Cut salami, prosciutto and Provolone into small chunks.
-Arrange all ingredients on a serving tray, and serve.
-Leisurely take your time, grazing as you go.

Easy Date Night Entree

Chicken Marsala with Angel Hair Pasta, & Steamed Green Beans

Chicken Marsala:

Ingredients:

2 boneless, skinless chicken breasts
1 tablespoon vegetable oil
1 egg, beaten
¼ cup flour
¼ cup Marsala wine
¼ cup diced onions
4 ounces button mushrooms, sliced
¼ teaspoon salt
¼ teaspoon pepper
4 ounces angel hair pasta

Directions:

-Heat oil in a frying pan on medium heat, and preheat oven to 350 degrees.
-Mix flour, salt and pepper together.
-Dredge chicken breasts in flour mixture, and then dip in beaten egg.
-Carefully place in hot pan, and cook on both sides until golden brown.
-Place chicken on a baking sheet and place in the oven for 15 minutes, or until internal temperature is 160 degrees.
-Bring a pot of salted water to a boil, and cook angel hair pasta according to package directions. Drain when finished.
-Add the onions to the frying pan, and briefly sauté.
-Add Marsala wine, and bring to a boil.
-Add sliced mushrooms & stir. Cover and simmer for 2-4 minutes.
-Serve the chicken on top of angel hair pasta, and top with the mushroom mixture.

 
Steamed Green Beans

Ingredients:

½ pound green beans, ends trimmed
2 tablespoons butter
Salt & Pepper, to taste


Directions

-Bring a half inch of water to a boil in a saucepan.
-Add green beans, cover, and cook for 3-5 minutes, or until green beans are tender.
-Drain excess water, and add butter to green beans. Season with salt and pepper to taste.

Easy Date Night Dessert

Raspberry Coconut Chocolate Truffles


Ingredients
:

4 ounces semisweet chocolate, chopped
2 ounces unsweetened chocolate
4 tablespoons unsalted butter
7 ounces sweetened condensed milk
3 tablespoons raspberry liqueur
½ cup coconut flakes

Directions:

-In a large saucepan over medium heat, melt chocolates together with butter and condensed milk. Stir constantly
-Once melted and mixed completely, remove from heat. Whisk in raspberry liqueur until smooth.
-Transfer to a bowl and place into the refrigerator until firm enough to hold its shape, about 20 minutes.
-Using a small scoop or tablespoon, form mixture into balls, about one tablespoon each. Place on greased parchment on a cookie sheet.
-Roll each ball in coconut flakes, and place in fridge for 10-15 minutes until firm.

Spinach & Feta Salad with Warm Bacon Dressing

Start off your romantic meal with a salad that packs a flavor punch!

Ingredients:

6 ounces baby spinach, washed
4 strips of bacon
2 hardboiled eggs, sliced
¼ cup Feta cheese crumbles
2 tablespoons chopped walnuts
3 tablespoons red wine vinegar
1 ½ tablespoons sugar
1 teaspoon Dijon mustard

Directions:

-In a large skillet over medium heat, fry the bacon strips until crispy and fat is fully rendered out. Remove bacon from skillet, and save bacon grease on the side.
-Chop bacon into small pieces, and set aside.
-Transfer the bacon grease to a small saucepan; heat on low.
-Whisk in vinegar, sugar and Dijon mustard. Lightly season with salt & pepper
-In a large bowl, mix spinach, crumbled bacon, sliced eggs, Feta cheese, and walnuts.
-Drizzle dressing over the top of the salad until just moist, and not soggy.
-Serve.

Easy Date Night Entree

Rosemary Pork Chops with Goat Cheese Mashed Potatoes and Roasted Brussel Sprouts

Rosemary Pork Chops are a simple & delicious way to start off your main course. If you don’t have a broiler pan, you can substitute a baking sheet with a metal cooling rack on top.


Rosemary Pork Chops:

Ingredients:

2 bone-in pork chops (about ½ inch thick each)
2 teaspoons garlic paste
1 teaspoon chopped fresh rosemary
1 tablespoon olive oil
1 tablespoon lemon juice
¼ teaspoon salt

Directions:

-Preheat the broiler in your oven.
-Mix garlic paste, rosemary, oil, lemon juice and salt together. Rub mixture all over the pork chops, and place on a broiler pan.
-Place pan under the broiler, about 4 inches from heat, for 4-5 minutes.
-Turn over, place under the broiler again and cook for an additional 4-5 minutes, or until internal temperature reaches 145.
-Remove from broiler, and let rest for 5 minutes before plating.

 
Goat Cheese Mashed Potatoes

A little bit of goat cheese goes a long way! It will add a creamy, tangy layer of flavor to your mashed potatoes.


Ingredients:

1 ½ pounds russet potatoes, peeled and cut into small chunks
½ cup whole or 2% milk
3 tablespoons butter
½ teaspoon salt
¼ teaspoon ground black pepper
2 ounces soft fresh goat cheese, crumbled


Directions

-Cook potatoes in a large pot of boiling water until tender – about 8-10 minutes. Turn off heat, drain potatoes, and return potatoes to the pot.
-Add milk, butter, salt and pepper, and mash potatoes with a potato masher or hand mixer.
-Add goat cheese to mashed potato mixture, and stir until just blended.
-Serve.

  
Roasted Brussel Sprouts

If you don’t usually like Brussel sprouts, give this recipe a try! Roasting Brussel sprouts brings out deeper, more complex flavors than steaming them. 


Ingredients:

1 pound Brussel sprouts
1 ½ teaspoon vegetable oil
1 ½ teaspoon Balsamic vinegar
¼ teaspoon salt
¼ teaspoon ground black pepper


Directions

-Preheat oven to 425 degrees
-Chop off any rough stems, and cut each Brussel sprout in half lengthwise.
-Toss with oil, vinegar, salt and pepper, and place cut-side down on a baking sheet.
-Roast for 15-20 minutes, or until tender and caramelized on the outside.

Easy Date Night Dessert

Strawberry and Chocolate Ice Cream Sundaes

Making your own strawberry topping is a great alternative to purchasing pre-made toppings, and adds a special touch to your meal!

Ingredients:

1 pint vanilla bean ice cream
1 cup fresh strawberries, sliced
1 tablespoon butter
1 tablespoon sugar
½ cup chocolate chips
Whipped cream
Chocolate sprinkles, for garnish.

Directions:

-In a medium saucepan, melt butter over medium heat. Add strawberries and sugar, and cook for 3-5 minutes, or until reduced & strawberries are soft.
-Melt chocolate chips in microwave, or over a double boiler, stirring occasionally.
-Place one large scoop of ice cream in each sundae dish, and top with strawberry mixture. Drizzle each sundae with melted chocolate, and top with whipped cream and sprinkles.

Pan-Fried Cream Cheese Wontons

Creamy on the inside, crisp on the outside... delicious!

Ingredients:

8 Wonton Wrappers
½ cup cream cheese, softened
1 teaspoon sugar
1 teaspoon soy sauce
½ teaspoon ground ginger
1 green onion, diced
Oil, for frying

Directions:

-In a medium bowl, combine cream cheese, sugar, soy sauce, ginger and green onion.
-Place wonton wrappers on a flat surface. Using a small spoon, carefully spoon cream cheese mixture into the middle of each wrapper.
-Moisten edges of wonton wrappers with water, and fold each wrapper in half diagonally, making a triangle.
-Press around edges to seal.
-Heat oil in a large skillet over medium to medium-high heat. When oil reaches 350 degrees (or bubbles when a wonton is put it), carefully place four wontons at a time in the skillet, careful not to overcrowd.
-Fry wontons for one to two minutes on each side, or until each side is light brown.
-Carefully remove from oil and let drain on paper towels. Repeat with second batch of wontons.
-Serve warm.

Orange Chicken with Asparagus & Almonds, and Steamed Rice

This classic stir fry dish is full of flavor and will tease your taste buds.

Ingredients:

2 boneless, skinless chicken breasts
1 tablespoon vegetable oil
1 tablespoon cornstarch
¼ cup onion, sliced
2 cloves of garlic, minced
½ teaspoon ground ginger
½ cup chicken stock
2 tablespoons frozen orange concentrate
2 teaspoons soy sauce
1 bunch of asparagus, ends trimmed
Slivered almonds, to garnish

Directions:

-Cut the chicken into strips, about 2 inches long, and dust with the cornstarch
-Heat the oil in a frying pan over medium heat, and sauté the onion and garlic for one minute.
-Add the chicken strips, and stir. Season with the ground ginger
-Cut asparagus into ½ inch long pieces.
-Add chicken stock, orange concentrate, soy sauce, and asparagus. Bring to a boil, and simmer for 2-3 minutes, or until asparagus is tender. Turn off heat.
-Season to taste, if needed, with salt and pepper.

 
Steamed Rice

Basic steamed rice, but with chicken stock for added flavor. 


Ingredients:

1 cup of long grain white rice
2 cups of chicken stock
1 tablespoon butter


Directions

-In a medium saucepan, melt butter over medium to medium-high heat
-Add in rice, and toast in butter for 2-3 minutes, being careful not to burn the rice.
-Add in chicken stock & stir.
-Bring to a boil; stir, cover with a lid, and turn heat down to low.
-Cook for 15 minutes, or until rice is tender.
-Remove from heat and fluff with a fork.
-Serve

Baked Crab Dip with Crostini

If you’d like, you can mix this dip ahead of time and stash it in the fridge until you’re ready to bake it!

Ingredients:

8 ounces of cream cheese, softened
2 tablespoons mayo
1 cup shredded Cheddar or Colby Jack cheese
6 ounce can of crab meat, drained
2 teaspoons Old Bay or seafood seasoning
1 thin French baguette
3 TB olive oil

Directions:

-Preheat oven to 350 degrees
-In a medium bowl, gently fold all ingredients together, and place in a greased 8x8 casserole or pan.
-Bake for 15-20 minutes, or until hot & bubbly.

Roasted Salmon, Herbed Fingerling Potatoes and Broccoli Almondine


Roasted Salmon

Roasted Salmon is on the lighter side, but is packed full of flavor!

Ingredients:

2 6-ounce salmon fillets
¼ teaspoon salt
¼ ground black pepper
2 lemon slices

Directions:

-Preheat oven to 425 degrees
-Place salmon fillets on a greased baking pan, and sprinkle with salt and pepper. Cut each lemon slice in half, and place two halves on each salmon fillet.
-Bake for 15-20 minutes, or until fish flakes easily with a fork.

 
Herbed Fingerling Potatoes

If you can’t find fingerling potatoes, you can substitute small new or red potatoes.


Ingredients:

1 pound fingerling potatoes, washed
2 tablespoons unsalted butter, melted
½ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon fresh chopped parsley
1 teaspoon fresh chopped thyme


Directions

-Place fingerling potatoes in a large pot, and cover with water, about one inch above the potatoes.
-Bring the pot to a boil over high heat, stir, and reduce to medium-high heat. Cook for 10 minutes, or until fork tender.
-Drain potatoes, and place in a large bowl.
-Add remaining ingredients, and stir to combine.

Herbed Fingerling Potatoes

Here’s a twist on the classic dish, Green Bean Almondine. Broccoli is substituted for the green beans, and pairs perfectly with the toasted almonds.


Ingredients:

½ pound broccoli, cut into florets
2 tablespoons unsalted butter
2 tablespoons slivered almonds
1 teaspoon lemon juice
¼ teaspoon salt


Directions

-In a large pot, cook broccoli in a steamer basket, over a half inch of water, until stalks are tender. Drain.
-Over medium heat, melt butter. Add in almonds, and cook, stirring often, for 2-3 minutes.
-Turn off heat, and add broccoli, lemon juice and salt to butter & almond mixture.
-Stir to combine, and serve.

White Chocolate Fondue

Ingredients:

½ cup heavy cream
¼ cup butter
1 12-ounce package of white chocolate chips

Directions:

-Heat a saucepan over medium heat, and add in cream and butter.
-Bring to a simmer, stirring constantly.
-Turn off the burner, remove the pan from heat, and gently stir in white chocolate chips until melted and fully combined.

Bold flavors and Italian classics make a romantic night for two into a night you’ll remember. Tonight’s menu is best paired with a medium-bodied white wine, like a Sauvignon Blanc; but the most important ingredient for tonight is love.

As with all recipes read through before starting, here we have a panna cotta that needs 6 hours chilling - get it done in the morning ready for when you get home!

Appetizer: Caprese Salad with Balsamic Vinegar & Oil 
Entrée: Basil Pesto Chicken Penne & Roasted Italian Vegetables
Dessert: Panna Cotta with Fresh Berries & Honey

Caprese Salad with Balsamic Vinegar & Oil 

An Italian classic, this appetizer salad is easily to assemble, as well as colorful.

Ingredients:

2 vine-ripened tomatoes
½ pound of fresh mozzarella
About ¼ cup fresh basil leaves
2 TB aged Balsamic vinegar
2 TB good quality extra-virgin olive oil
¼ tsp ground black pepper
¼ tsp salt

Directions:

-Carefully cut tomatoes & fresh mozzarella into ¼ inch thick slices. Season with salt and pepper.
-Stack basil leaves together, and roll. Using a sharp knife, carefully slice basil into small shreds.
-For each serving, alternate slices of tomatoes and mozzarella on a serving plate. Top each serving with half of the basil shreds.
-Drizzle each serving with 1 TB Balsamic vinegar and 1 TB extra-virgin olive oil.

Easy Date Night Entree


Basil Pesto Chicken Penne & Roasted Italian Vegetables

This entrée is big on flavor, and is a lighter Italian option – Make sure to leave plenty of room for dessert.

Ingredients:

3 cloves of garlic
2 cups fresh basil leaves, packed
¼ cup pine nuts
2/3 cup extra-virgin olive oil
¼ cup grated Pecorino cheese
¼ cup grated Parmesan cheese
½ tsp salt
¼ tsp ground black pepper
2 boneless, skinless chicken breasts
2 TB vegetable oil
½ pound penne pasta, cooked and drained
¼ cup shredded Parmesan cheese

Directions:

-In a food processor, pulse together the basil, garlic and pine nuts.
-Slowly incorporate the extra-virgin olive oil, blending to combine.
-Remove the bowl from the food processor, and gently stir in Pecorino cheese, Parmesan cheese, salt and pepper. Set aside.
-In a large skillet, heat vegetable oil over medium heat.
-Cut each boneless, skinless chicken breast into 1 inch chunks.
-Add to heated skillet, cooking until no longer pink, about 6-8 minutes (or until a food thermometer inserted in the chicken reads at least 165 degrees)
-After chicken has cooked, turn heat to medium-low and add in pesto and penne pasta. Stir to combine.
-Garnish with shredded Parmesan cheese, and serve.

 
Roasted Italian Vegetables

Roasting is a simple way to bring out complex flavors.

Ingredients:
¼ pound fresh green beans, washed & ends trimmed
1 yellow bell pepper, cut into 1 inch strips
1 large Portobello mushroom cap, cut into small chunks
2 cloves garlic, minced
¼ cup red onion, sliced
1 tsp salt
½ tsp ground black pepper
½ tsp dried oregano
2 TB vegetable oil

Directions

-Preheat oven to 425 degrees.
-Line a sheet tray with parchment paper, and set aside.
-In a large bowl, combine green beans, yellow bell pepper, Portobello mushroom, garlic and red onion.
-Sprinkle with salt, pepper and oregano, and stir to combine.
-Drizzle with vegetable oil, and stir to fully coat.
-Place on parchment lined tray and roast for 12-15 minutes, or until vegetables are tender and slightly caramelized.

Easy Date Night Dessert

Panna Cotta with Fresh Berries & Honey

Smooth and silky, you can serve this with any type of fresh berries you’d like.

Ingredients:

½ cup whole milk
1 ½ tsp unflavored gelatin
3 TB honey
1 ½ cups heavy whipping cream
1 ½ TB sugar
Fresh berries, for garnish
1 TB honey, for garnish

Directions:

-In a small bowl, place ½ cup whole milk. Carefully sprinkle 1 ½ tsp unflavored gelatin over top, and let sit, without stirring, for 3-5 minutes.
-Add milk & gelatin mixture into a heavy saucepan, and stir over medium heat until gelatin dissolves, making sure the milk doesn’t boil – about 5 minutes.
-Add cream, 3 TB honey, and sugar. Stir for about 7 minutes, or until sugar dissolves.
-Remove from the heat, and pour mixture equally into two wine or parfait glasses.
-Allow to cool slightly, and then place in refrigerator and chill until set, about 6 hours.
-When ready to serve, garnish with fresh berries of your choice tossed with 1 TB honey.

Appetizer: Fresh Guacamole with Toasted Chips
Entrée: Chili Chicken Quesadillas with Mexican Chopped Salad with Lime & Honey Dressing
Dessert: Spiced Flourless Chocolate Cake

Guacamole with tortilla chips

Fresh Guacamole with Toasted Chips

If you’d like, you can substitute prepackaged tortilla chips for the toasted chips, but I think making them fresh just tastes better – and it’s so easy!

Ingredients:

2 avocados, halved and pitted
½ jalapeno pepper
1 lime, juiced
2 TB fresh cilantro, chopped
1 small tomato, diced
½ tsp salt
¼ tsp ground black pepper
3 flour tortillas
Cooking spray
½ tsp salt

Directions:

-Scoop avocado out from skin, and cut into large chunks. Place in a medium sized bowl
-Carefully cut jalapeno pepper into small dice – I suggest wearing gloves while touching the pepper, so the oils don’t get on your hands. Please remember not to touch your eyes after touching the pepper!
-Add small diced jalapeno to the avocado.
-Add in the rest of the ingredients – lime juice, cilantro, tomato, salt and pepper – and stir to combine. If you’d like your guacamole less chunky, you can mash it together with two forks.
-Cover and refrigerate for at least 15 minutes, to allow flavors to develop
-Preheat oven to 400 degrees.
-Cut each tortilla in half, and then each half into fourths.
-Place tortilla chips in a single layer on a lightly greased baking sheet; lightly spray with cooking spray, and sprinkle with salt.
-Bake for 5-7 minutes, or until crispy. Serve with guacamole.

Chili Chicken Quesadillas

Spice up your date night with these great quesadillas! If you’d like more spice, you can substitute a different chili pepper for the Poblano – try Habaneros, if you really want to feel the heat!

Ingredients:

1 boneless, skinless chicken breast
1 small onion, sliced
1 Poblano pepper, seeds removed and cut into 1 inch strips
2 garlic cloves, minced
2 TB vegetable oil
½ cup Asadero cheese, shredded
½ cup mild cheddar cheese, shredded
2 10-inch flour tortillas
Cooking spray
Sour cream (if desired), for dipping

Directions:

-Preheat a large skillet over medium heat; add 2 TB vegetable oil.
-Add sliced onion, Poblano pepper and minced garlic to skillet; cook for 2-3 minutes.
-Meanwhile, slice boneless, skinless chicken breast into slices about ½ inch thick.
-Add chicken to skillet, and cook chicken & vegetables, stirring frequently, for about 7 minutes, or until chicken is tender and reaches temperature of 165 degrees F. Remove from heat to avoid overcooking.
-Lay tortillas out on a large cutting board or clean, flat surface. In a single layer on half of the tortilla, divide chicken and vegetable mixture evenly between the two tortillas.
-Top each tortilla with ¼ cup Asadero cheese and ¼ cup cheddar cheese. Fold tortillas in half.
-Heat a large skillet over medium heat, and spray with cooking spray. Place one tortilla in pan, and spray top half with cooking spray.
-Cook for 2-3 minutes, or until bottom side is crisp and brown. Carefully flip over, and cook other side for 2-3 minutes, or until crisp and brown.
-Repeat with second tortilla
-Cut each tortilla into 4 wedges, and serve with sour cream (optional) on the side.

 
Mexican Chopped Salad with Lime & Honey Dressing

The great thing about a chopped salad is that every bite is the perfect bite – with all of the salad components being so small, you get a little bit of everything with every forkful.
Ingredients:

For the salad

1 ½ cups romaine lettuce, chopped
1 tomato, diced small
¼ cup jicama, sliced into small strips
½ cup fresh corn kernels
3 radishes, thinly sliced
1 yellow bell pepper, diced small
½ cup Cotija cheese
½ cup cooked black beans, drained & rinsed

For the dressing

¼ cup fresh lime juice
¼ cup olive oil
2 TB honey
1 garlic clove, minced
2 TB fresh cilantro, chopped
¼ tsp salt
¼ tsp ground black pepper

Directions

-In a large bowl, mix all of the salad ingredients together.
-In a small food processor or blender, mix together all of the dressing ingredients except for olive oil.
-Slowly stream in olive oil while blending.
-Plate salad on serving plates, and drizzle with Lime & Honey dressing.

Spiced Flourless Chocolate Cake

Mexican chocolate is flavored with spices, and is the perfect addition to this sinfully rich chocolate cake.

Ingredients:

4 ounces Mexican chocolate bar
½ cup unsalted butter
¾ cup granulated sugar
3 eggs
½ cup cocoa powder
Fresh berries (optional), for garnish
Whipped cream (optional), for garnish

Directions:

-Preheat oven to 375 degrees F. Grease an 8 inch round cake pan, and line the bottom with parchment paper, and grease parchment paper.
-Chop Mexican chocolate into small pieces.
-In a double boiler, or bowl over a pot of simmering water, melt chocolate with butter, stirring until smooth. Remove from heat.
-Whisk sugar into chocolate mixture. Let cool for a few minutes.
-Add eggs, and mix well.
-Stir in cocoa powder until just combined.
-Pour batter into pan, and bake for about 25 minutes, or until the top forms a thin crust.
-Cool in pan for 5 minutes, and then carefully flip onto a serving plate.
-Cut into slices, and serve with fresh berries and whipped cream.

Loaded Potato Bites

Full of flavor, these little bites are great with ranch dipping sauce.

Ingredients for the potato bites

3 large potatoes, shredded (about 10 ounces)
1 large egg
3 slices of bacon, cooked
¼ cup sour cream
½ cup sharp cheddar cheese
1 TB fresh chives, chopped

Ingredients for the ranch dipping sauce

½ cup sour cream
¼ cup buttermilk
2 TB fresh parsley, chopped
2 tsp fresh chives, chopped
1 TB fresh dill, chopped
1 tsp Worcestershire sauce
½ tsp white vinegar
½ tsp salt
¼ tsp ground black pepper


Directions

-Earlier in the day, combine all of the ranch dipping sauce ingredients in a small bowl. Stir thoroughly, and then refrigerate until serving time.
-Preheat your oven to 425 degrees.
-Chop cooked bacon into small pieces; set aside.
-In a large bowl, combine shredded potatoes, egg, and sour cream. Stir to combine.
-Gently fold in chopped cooked bacon, cheddar cheese and chives.
-Using a small scoop, scoop about 2 TB of potato mixture onto a foil or parchment lined baking tray. Repeat, using all of the potato mixture.
-Bake at 425 degrees for about 20-25 minutes, or until potatoes are tender, but crispy on the outside.
-Serve with ranch dipping sauce.

BBQ Pulled Pork Sandwiches

It’ll taste like you’ve spent hours standing over a stove, but it’s really as simple as could be.

Ingredients

1 pound pork tenderloin, excess fat trimmed
1 cup ketchup
½ cup water
¼ cup plus 2 TB brown sugar, packed
¼ cup white vinegar
1 tsp celery seed
½ tsp liquid smoke
1 tsp onion powder
Hamburger buns, split & toasted


Directions

-In a bowl, combine ketchup, water, brown sugar, vinegar, celery seed, onion powder and liquid smoke. Mix thoroughly
-Reserve ½ cup BBQ sauce on the side, for saucing pulled pork after cooked.
-Place pork tenderloin in the slow cooker, and cover with remaining BBQ sauce.
-Cook on high for 4 hours, or until pork reaches 160 degrees F.
-Shut off slow cooker, and let pork rest for 10-15 minutes.
-Remove pork tenderloin from slow cooker, and, with two forks, shred the pork.
-Mix with ½ cup reserved BBQ sauce.
-Serve on toasted hamburger buns.


Broccoli Slaw
Broccoli Slaw is a great alternative to Cole Slaw – and it’s easy, too!

Ingredients:
1 package broccoli slaw mix (about 12 ounces)
or 1 large broccoli crown, shredded
½ cup mayo
2 TB vinegar
2 TB white sugar
¼ tsp salt
¼ tsp cracked black pepper


Directions:
-In a small bowl, combine mayo, vinegar, sugar, salt and pepper.
-Pour dressing mixture over broccoli slaw mix, and stir to combine.
-Refrigerate for at least 30 minutes before serving.

Seared Sirloin Steak with Herb Compound Butter

 

Shrimp Cocktail

A classic appetizer, Shrimp Cocktail is easy to make, and will certainly impress your partner.

Ingredients:
1 pound shrimp, shelled and deveined with tails on
1 tsp salt
½ cup ketchup
2 TB horseradish
1 tsp Worcestershire sauce
½ tsp hot sauce
1 TB lemon juice


Directions:
-Bring 2 quarts of water to boil over high heat in a large pot. Add salt.
-Add shrimp, return to boil. Reduce heat to medium-high and cook for 2-3 minutes, or until shrimp are bright pink and opaque.
-Remove from heat and drain.
-In a small bowl, combine ketchup, horseradish, Worcestershire, hot sauce and lemon juice.
-In a martini glass, carefully spoon cocktail sauce into the middle. Arrange shrimp around the edge of the martini glass, hanging over the sides. Serve.

Pan Seared Sirloin with Herb Compound Butters

There’s something sexy about steak – yes, sexy! Studies have found that red meat is an aphrodisiac, and can boost romantic desire when eaten.

Ingredients:
2 sirloin steaks, about 1-1 ½ inches thick
1 TB vegetable oil
1 tsp salt
½ ground black pepper
Herb Compound Butter (recipe below)


Directions:
-Preheat a large cast iron (or heavy bottomed) pan over medium high heat.
-Dry steaks with a paper towel, making sure to absorb all excess moisture.
-Liberally coat steaks in 1 TB vegetable oil, and season with salt and pepper.
-Carefully place steaks in the hot pan; be careful of oil splatters.
-Cook for 5 minutes, then flip over and cook for an additional 5 minutes for medium rare.
-If you’d like your steak medium, cook for an additional two minutes or until the internal temperature reaches 140 degrees F.
-Additionally, if you prefer your steaks medium well, cook for an additional 3-4 minutes or until the internal temperature reaches around 145 degrees.
-Turn off the heat, remove steaks to a plate and cover loosely with aluminum foil. Let rest for 5-10 minutes before plating.
-Serve with a pat of Herb Compound Butter on top (recipe below)

Herb Compound Butter:
Packed with flavor, this compound butter can easily be made several hours or a day ahead of time.

Ingredients:
1 stick of salted butter
3 TB fresh chives, chopped
½ tsp fresh ground black pepper


Directions:
-Allow butter to come to room temperature by sitting on the counter for about 30 minutes. You want it soft enough to mix, but not melted.
-Place butter in a bowl, and add fresh chives and ground pepper. Mix to combine.
-On a large sheet of wax paper, spoon compound butter on top. Form into log shape, and wrap wax paper around it. Roll to achieve relatively uniform thickness.
-Chill in the fridge for 30-45 minutes or until firm.

Roasted Fingerling Potatoes:
Roasted with herbs, these fingerling potatoes are crisp, buttery and flavorful.

Ingredients:
1 pound fingerling potatoes, washed
¼ tsp ground black pepper
1 tsp salt
¼ tsp freshly chopped rosemary
1 TB minced garlic
1 TB vegetable oil


Directions:
-Preheat oven to 400 degrees. Place an ovenproof skillet or heavy baking tray in the oven, and let it heat up for 15 minutes.
-Toss potatoes in a medium bowl with 1 TB vegetable oil.
-Sprinkle with pepper, salt, rosemary and minced garlic. Toss to combine
-Arrange potatoes in a single layer on preheated skillet or baking tray.
-Roast for 25-30 minutes, or until golden brown on the outside, and soft on the inside when pierced with a fork.

Sautéed Spinach:
A classic steakhouse side, spinach is packed with vitamins & minerals, and adds a bright color to your plate.

Ingredients:
1 TB garlic, minced
1 TB vegetable oil
2 TB chicken broth
1 package (about 8 ounces) fresh spinach
¼ tsp salt
¼ tsp ground white pepper


Directions:
-Add oil to a large skillet or sauté pan over medium to medium-high heat.
-Add garlic, and cook for 1 minute.
-Add chicken broth, and cook for a minute until slightly reduced.
-Add spinach, salt and pepper, and cook, stirring occasionally, for 2-3 minutes, or until spinach is just wilted.
-Remove from heat and serve.

Cheesecake-Stuffed Strawberries with Chocolate. 

Chocolate and strawberries are a classic romantic combination – add a cheesecake-inspired filling for a fun, silky twist.

Ingredients:

1 pint fresh strawberries, washed & leaves removed
4 ounces cream cheese, softened
¼ cup powdered sugar
1 tsp vanilla extract
½ bag semi-sweet chocolate chips, melted


Directions:

-With a paring knife or small melon baller, carefully hollow out a little bit from the top of each strawberry to create a place for the cheesecake filling.
-In a medium bowl, mix cream cheese, powdered sugar and vanilla with a hand mixer. Beat on medium speed for about two minutes, or until fluffy.

-When serving, place cheesecake-stuffed strawberries on a small platter with a bowl of the melted chocolate in the middle.

Ingredients:
1/3 cup mayo
1/3 cup sour cream
1 lemon, juiced
¼ tsp ground black pepper
1 pinch salt
½ cup bleu cheese crumbles

Directions:
-In a blender or food processor, combine mayo, sour cream, lemon juice, salt, pepper and half of the bleu cheese crumbles.
-Pulse until well combined.
-Remove from blender into serving container, and stir in remaining bleu cheese crumbles.

Slow Cooker Pot Roast with Potatoes and Carrots and optional asparagus

It’ll only taste like you’ve slaved away in the kitchen all day – using a slow cooker gives you perfect, tender pot roast with minimal cooking.

Ingredients:
1.5 to 2 pound chuck roast
2 TBSP all-purpose flour
½ tsp salt
¼ tsp ground black pepper
2 TBSP vegetable oil
1 cup beef stock
3 red potatoes, washed and halved
3 carrots, peeled and cut into 2 inch chunks
1 medium onion, peeled and sliced into rings
1 tsp dried thyme
½ tsp garlic powdery

Directions:
-Heat 2 TBSP vegetable oil in a large skillet or pot over medium to medium high heat.
-Mix together flour, salt and pepper; lightly coat pot roast in flour mixture and shake off excess.
-Sear pot roast in hot pan on each side until light to medium brown; remove from pan and shut stove off.
-Place pot roast in the slow cooker, and add potatoes, onions and carrots on top.
-Mix together beef broth, thyme and garlic powder. Pour beef broth mixture over pot roast and vegetables, and place the lid on the slow cooker.
-Cook on high for 3-4 hours, or until pot roast is tender & falls apart.

Roasted Asparagus:
A simple and delicious way to eat asparagus!

Ingredients:
½ pound asparagus, rinsed
2 TBSP vegetable oil
1 tsp salt
½ tsp black pepper

Directions:
-Preheat your oven to 400 degrees.
-Line a cookie sheet or sheet tray with aluminum foil for easy clean-up.
-Cut the bottom ½ inch to 1 inch of the asparagus stalks off, and discard.
-Toss asparagus stalks with oil, salt and pepper until evenly coated.
-Place on sheet tray, in a single layer.
-Roast in oven for 15-18 minutes or until tender.

Ranch Veggie Roll-Ups

Ingredients:
2 ten-inch flour tortillas
1 cucumber, sliced thin
1 carrot, shredded
½ cup shredded cheddar cheese
½ cup ranch cream cheese spread

Directions:
-On each flour tortilla, spread ¼ cup of ranch cream cheese spread.
-Carefully top each tortilla with sliced cucumber and shredded carrot, all in one thin layer.
-Top with shredded cheddar cheese
-Starting at one end, roll tortillas into pinwheels (almost like rolling sushi).
-Once rolled, cut into 1-inch thick slices and place on tray.

Lemon Pepper Chicken

Ingredients:
2 boneless, skinless chicken breasts
Lemon pepper seasoning
2 lemon slices
Cooking spray

Directions:
-Preheat oven to 400 degrees F.
-Place a chicken breast in between layers of wax paper, and pound thin with the flat side of a meat tenderizer mallet. (In a pinch, a clean hammer works as well!)
-Place chicken breast on a cookie sheet, greased with cooking spray, and repeat with the second chicken breast.
-Sprinkle chicken breasts with lemon pepper seasoning, and top each chicken breast with a slice of lemon
-Bake for 25 minutes, or until the temperature of the chicken reaches 165 degrees F.

 

Creamy Mashed Potatoes:

Ingredients:
2 pounds Russet potatoes, peeled and diced
2 TBSP butter
½ cup milk
¼ cup sour cream
½ tsp ground black pepper
1 tsp salt
Fresh chives, chopped

Directions:
-Place peeled, diced potatoes in a pot and cover with water.
-Boil until tender, about 7-9 minutes
-Drain the potatoes, and return to the pot.
-Add in butter, salt and pepper, and stir to combine.
-With a potato masher, gently press down and mash potatoes.
-Add in milk and sour cream, and stir to combine.
-Garnish with chives, and serve.


Steamed Green Beans
:

Ingredients:
½ pound fresh green beans, rinsed & ends trimmed
1 tsp salt
2 TBSP butter

Directions:
-In a medium-sized pot, add about 1 inch of water.
-Bring to a boil, and add in the salt.
-Add in cleaned green beans, cover pot with a lid, and cook for 4-6 minutes, or until green beans are tender and most of the water has evaporated.
-Drain, if necessary, and add butter to green beans. Stir to combine, and serve.

Ingredients:
1 ¾ cups all-purpose flour
½ cup baking cocoa
1 tsp salt
2 cups white sugar
5 egg whites
1 cup vegetable oil
1 TBSP vanilla extract
2 cups semi-sweet or milk chocolate chips
½ cups chopped pecans (optional)

Directions:
-Preheat oven to 350 degrees, and grease a 9x13 inch baking pan
-Combine sugar and oil, and mix together.
-Add in egg whites and vanilla extract, and mix to combine.
-Mix in your dry ingredients – flour, cocoa, salt – until just combined.
-Gently stir in chocolate chips and pecans (optional).
-Pour into greased 9x13 inch pan, and bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
