Coat the pork with a spice rub of chili powder, salt, sugar, cinnamon and cumin. Layer the pork on top of the garlic and onions and set the crockpot to work. Once done, take the pork and shred it using a pair of forks. Place it back into the crockpot with a little of the liquid it was cooked in or some barbeque sauce. That’s it! Your perfect pulled pork is ready to be served.

Hey! French toast shouldn’t be crunchy … but this does it so well! Beat the eggs and milk together then soak the bread in the mixture one slice at a time. Dip the bread into the peanut so each side gets a nice layer. Place one slice in a hot skillet coated with cooking spray and cook until egg is set. Clean the skillet and repeat for the rest of the slices. Great with fruit.

This recipe makes me want to go camping – not sure why! Preheat the oven and bake the biscuits until they are golden brown. Evenly brown the bacon in a deep skillet and set aside to drain. Beat together the eggs and milk and scramble them in a skillet coated with oil. Cut open the biscuit, butter lightly then layer on the bacon, eggs and cheese. Feel free to belt out a couple verses of a great camping song to go with it.

Let it simmer then add spinach, salt and black pepper, giving it a stir. Next, break the eggs over the mixture and leave it to simmer gently. When the egg whites are almost set, cover and cook until they set. Sprinkle shredded pecorino Romano cheese on top. Serve. Enjoy!

Ready for a delicious taste of the Orient? Combine sugar, Thai chili paste, fish sauce and soy sauce. Coat a heated skillet (or wok, if it feels more authentic) with oil, then stir-fry the garlic, add the beef and stir-fry some more. Once the beef is cooked, add the soy mixture and let it thicken. Place the beef on a plate and stir-fry the pepper and bok choy. Wipe the pan and cook the eggs until the whites are set. Serve with one egg atop rice, beef and bok choy. Simply fantastic!

This dish is just too easy. Cover and cook black beans until they are heated through. Beat the eggs and scramble them in a hot skillet with vegetable oil. Warm the tortillas in a microwave or oven, lay them flat and spoon on the black beans, eggs, cheese and salsa. Roll it up into a burrito and then choose – either eat it now or let it cool and freeze it for reheating the next day. It’s great both ways but I’m all for eating it now!

Mix and microwave water, vinegar and sugar, add celery and leave for 15 minutes then drain. Stir together avocado, mayonnaise, juice, mustard, pepper and salt until smooth. Peel and chop the eggs then gently combine them with the celery, sunflower seeds and avocado mixture. Use to make sandwiches along with bread, arugula and tomato slices. Yum!

Now comes the fun part – have it in a salad, as a sandwich, by itself, whatever!

Remove it and repeat for the other eggs. Serve up the asparagus with an egg on top, seasoned with salt and pepper and a sprinkle of cheese.
