Warm and comforting stews are perfect evening meals as outdoor temperatures begin to fall. What makes them even better, is when you don’t have to wait hours for them to “stew”. It feels great to be able to whip up a quick and easy stew for dinner when you are pressed for time or just don’t feel like spending too much time in the kitchen.

These 10 stew dinners are hearty and healthy options you can have with any accompaniment you wish (such as chunks of crusty bread or fluffy rice) or simply on their own.

1. Chicken, Bacon and Mushroom Stew

The beautifully melded flavors in this dish will make everyone think you took hours getting it just right! Brown some chicken meat and set it aside. Fry together bacon, garlic and button mushrooms before adding in a little flour. Next in are chicken stock and white wine, then leave it to thicken. Add the chicken and some thyme and allow it to simmer until the chicken is cooked. Stir in parsley and season your stew with salt and pepper. Serve the stew on top of some cooked risoni pasta to which you’ve added frozen peas, butter and a little parsley. Seconds, everyone?

2. Oyster Stew

This quick, classy stew will delight any discerning dinner guest. Sauté shallots and celery in melted butter until the shallots are tender. Place half-and-half cream in a large pot and add in the butter, shallots and celery, stirring continuously. Pour in the oysters just as the cream begins to boil and season the stew with salt, pepper and some cayenne pepper. Continue to stir and you know it’s ready to serve when the oysters curl. Creamy goodness!

Here is another deliciously creamy seafood stew for you to try. Sauté onion in melted butter and add in some condensed cream of potato soup and condensed celery soup. A little dry sherry is next as well as some salt and pepper to taste. What’s the last step? Pour yourself a bowl of this awesome stew, curl up on the sofa and enjoy!

4. Chickpea, Chorizo and Spinach Stew

This quick dish has just the right flavors to make it a guaranteed hit. Stir-fry onion and add in celery, carrot, bay leaves and thyme. Season with salt and pepper then allow it to cook for a few minutes, giving it an occasional stir. Add garlic, diced chorizo, smoked paprika and cinnamon. Let the mixture continue frying until the chorizo gets crisp and the vegetables soften. Stir in canned chickpeas, sherry vinegar and water then leave it to simmer. Stir in the spinach, allowing it to wilt and you’re ready to serve. Pass the warm crusty bread please!

While there are similarities between this dish and the one above, their best common trait is how simple yet yummy they are! Brown sliced sausage then add thinly sliced garlic and cook some more. Cannellini beans, chicken broth and diced tomatoes are next. Allow it to boil then add in some kale and season the pot with salt and pepper. Let it simmer with the occasional stir until the kale wilts. Of course, you can change up the taste each time just by using a different type of sausage – how easy!

6. Egyptian Edamame Stew

Lots of lovely sauce is the winner in this dish. Cook edamame in boiling water until tender then drain them and set them aside. Cook some onion in heated oil in a covered sauce pan, adding zucchini when the onion is softened. Let it cook until the onion begins to brown then add garlic, cayenne, cumin and coriander and cook some more giving it a stir. Diced tomatoes are next then you allow the mixture to boil. Stir in the edamame to heat through and remove the stew from the heat before adding cilantro and lemon juice. Couscous or pita bread goes wonderfully with this.

7. Stewed Okra and Tomatoes

Okra takes center stage in this warming dish. Over medium heat, dissolve a vegetable or chicken bouillon cube in water. Add in frozen, cut okra then leave it to simmer. Pour in a can of tomatoes and green chilies along with some tomato sauce and butter. Stir and let it thicken up as much as you like. Perfect!

8. 30-Minute Turkey Stew

What can make cooking stew for dinner even better? When it’s a complete one pot meal as well! Sauté onion and celery in hot oil and then add some potatoes, carrots, turkey or chicken broth, sage and black pepper. Bring it to a boil then reduce it to a simmer until the potatoes are tender. Add a little flour and water mixture to help it to thicken, then add pulled leftover turkey and let it heat through, stirring occasionally. Mmm … nutritious, hearty and YUM!

Here is a second take on the turkey stew above – and it’s just as scrumptious! Cook ground turkey, onion and garlic then drain the excess liquid before adding chopped cabbage, carrots, diced tomatoes, water and brown sugar. Also going in the pot are white vinegar, salt dried oregano, dried thyme and pepper. Let it boil and then simmer until it is at the consistency you want. Chunky goodness!
