Appetizer: Cheesy Spinach Dip with Tortilla Chips
Entrée: BBQ Meatloaf burgers with Oven Roasted Potato Wedges
Dessert: Ice cream sundaes
Cheesy Spinach Dip with Tortilla Chips
½ package frozen spinach (about 6 ounces), defrosted and drained
½ cup parmesan cheese
½ cup mayo
½ cup shredded mozzarella cheese
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
Tortilla chips, bakery fresh or packaged
-Preheat your oven to 425 degrees
-Mix all ingredients, and place into a greased casserole dish
-Bake for 7-10 minutes, or until heated through and bubbly
-Serve with tortilla chips
BBQ Meatloaf Burgers
2 TBSP diced onion
½ pound 80/20 ground beef*
2 TBSP fresh chopped parsley
¼ cup plain breadcrumbs
¼ tsp granulated garlic
1/3 cup BBQ sauce
½ tsp salt
¼ tsp ground black pepper
1 TBSP vegetable oil
2 buns, split and toasted
Lettuce, tomato and dill pickles
-Preheat a grill pan on your stove to medium, medium-high heat.
-In a large bowl, combine the ground beef with the onion, parsley, egg, breadcrumbs, garlic, salt and pepper. Add in 1 TBSP of BBQ sauce and mix well.
-Divide the mixture into halves, and form each half into a patty.
-Lightly brush the patties with vegetable oil, and place in your grill pan.
-Grill for 6 minutes, and then gently flip the patties over.
-Brush patties with BBQ sauce, and cook for an additional 5-6 minutes, or until cooked through.
-Serve the patties on the buns with lettuce, tomato and dill pickles; add extra BBQ sauce if desired.
*Note: For a healthier twist, you can substitute ground turkey for the ground beef
Oven Roasted Potato Wedges:
3 medium potatoes, washed
2 TBSP vegetable oil
1 ½ tsp Adobo seasoning
-Preheat oven to 425 degrees
-Cut potatoes into half, then cut each half into fourths (8 wedges per potato)
-In a bowl, combine oil and Adobo seasoning; add in potato wedges, and toss to coat
-Place on a baking sheet, and bake at 425 degrees for 20-25 minutes, or until wedges are crisp on the outside, and soft on the inside.
Ice Cream Sundaes
1 pint vanilla bean ice cream
Hot fudge sauce
-Divide the pint of ice cream between two sundae or similar glasses or bowls
-Top with your choice of dessert sauces & whipped cream
-Garnish with cherries
