Who says you can’t eat a sandwich with a fork? To prepare, preheat your broiler. Coat both sides of bread with cooking spray and broil on each side until lightly toasted. Gently toss 2 cups of arugula, 2 teaspoons of extra-virgin olive oil, 1/8 teaspoon of salt and 1/4 teaspoon of pepper. Set your salad aside. In a large, nonstick skillet, heat 1 teaspoon of extra-virgin olive oil. With the skillet still over medium heat, crack 4 eggs into the pan and cook for two minutes. Cover and cook for a couple of minutes more until the whites are set. After removing the eggs from the heat, combine 1/4 teaspoon of salt, 3/4 cup park-skim ricotta cheese, 1 ounce of grated fresh Parmigiano-Reggiano cheese, and 1 teaspoon of chopped fresh thyme in a small bowl and spread over your toasted bread slices. Add some of your salad and an egg to each of the bread slices and sprinkle with salt and pepper.

It doesn’t get much simpler than this Asian twist on a favorite comfort food! After melting 1 teaspoon of butter in a nonstick skillet, fry the eggs to your preference. We strongly recommend runny! While cooking your eggs, toast your bread and spread 1 teaspoon of butter on one side of each slice. Place a slice of cheddar cheese on each piece of toast and gently place an egg on top of the cheese followed by spinach leaves and as much Sriracha sauce as you can handle! These sandwiches are too tasty to be true! Over medium-high heat, fry 12 slices of pancetta in a large nonstick skillet until you reach the perfect crispiness. Place the pancetta on paper towels but don’t drain or clean the skillet. In an extra-large skillet, melt 2 tablespoons of butter and add four bread slices topped with 2 slices of provolone. Add a pinch of black pepper and cook until the cheese melts. While your bread is toasting, heat the skillet used for the pancetta over medium heat. Crack 4 eggs into the skillet and cook until your whites are set but keep your yolks runny! Place 6 pancetta slices and 2 fried eggs on top of each of the cheesy toasts. Add chopped onions, Parmesan cheese and 3 basil leaves. Top with another slice of bread and take a big bite!

Good for four or, if you’re hungry, just one! Either way, they’re ready in 20 minutes!

Paula Deen certified so you know it’s delicious! Fry 4 slices of bacon in a small skillet over medium heat until crispy enough to crunch when you bite it. Remove from the pan and place on paper towels. Drain the grease from the skillet but reserve just a bit. Spread butter on both sides of the bread and toast both sides in a separate skillet on medium heat. Mix 4 ounces of cream cheese, 1 teaspoon of minced parsley, and 1 teaspoon of minced green onions in a small bowl. Add a pinch of salt and pepper and spread onto 1 side of each of your toast slices after you have removed them from the skillet. Using the same skillet as you used for your bacon, fry the eggs over medium-low heat breaking the yolk. Place each egg on top of a piece of toast followed by 2 slices of bacon, 2 slices of tomato, and 2 slices of avocado. Cover with another slice of toast.

You’re going to wish you discovered this recipe sooner! In a large skillet over medium-high heat, sauté your sliced half-onion in 1 1/2 teaspoons of olive oil. While two English muffins are toasting, move your onions to one side of the pan and crack in 2 eggs with the skillet over medium heat. After 2 minutes, add a slice of Provolone cheese over each egg and continue cooking until the egg whites have set. When your English muffins are toasted, spread the mayonnaise and mustard on one side and gently place an egg onto the muffin. Fry 8 slices of salami for just about 1 minutes per side. Add your onions followed by 4 slices of the salami. Dig in!

It’s so good, you’re going to want to keep this one a secret! Start by toasting your whole-wheat bun and spread with either mayonnaise or butter. Fry a couple of pieces of bacon in a medium skillet until crisp and set aside on a plate of paper towels. Remove most of the bacon grease but leave a little for taste. Over medium-high heat, cook a minced clove garlic and 1 1/2 cups of minced kale tossing frequently. Add salt to your preferred taste. Keep the kale moist as you cook it by adding 1 or 2 tablespoons of water. Once the kale is tender, sprinkle with white wine vinegar and remove from the pan. Clean the skillet and fry the egg in 1 tablespoon of vegetable oil over medium heat. Place the kale on the bottom half of the whole-wheat bun followed by the bacon. Next add the egg and the top bun.

Forget about the hash browns and have a real potato! Bake your potatoes until they’re almost finished, but not quite. Cut off the top of each potato and scoop out the middle with a spoon. Place into an oven at 177 degrees Celsius for about 20-25 minutes. This amazingly simple dish will take a bit longer if you are baking your potato specifically for this, but if you have left over baked potatoes from dinner then it’s even easier!

Easy but perfect, you’ll love this quick dish! Cook your bacon to whatever crispiness your heart desires in a skillet over high heat. Remove the bacon and place on a paper towel-lined plate. Also remove the excess fat and any black bits from the skillet. On medium heat, place a flour tortilla in the skillet. Arrange avocado slices around the rim of half of the tortilla effectively creating a ring to prevent the egg from leaking. Crack an egg into the middle of the ring and sprinkle with pieces of your bacon, cheese and a bit of salt and pepper. Fold the empty half of the tortilla over and cook until it’s golden and crispy. Flip but be careful not to spill the tasty contents! Cook again to the same golden color and crispiness. Serve while hot with some salsa for spiciness!

A tasty twist on eggs Benedict! After boiling 2-3 inches of water in a large saucepan over high heat, reduce to medium-low and add the vinegar and 2 teaspoons of salt. Don’t let it get too hot, just a gentle simmer. On each half of an English muffin, place a slice of mozzarella cheese and a slice of tomato, however thick you would like. Toast in a toaster oven until your cheese is soft and the muffin is toasted. Should only be about 5 minutes. Crack an egg into the bowl and very gently slip the egg into the simmering water. Add the other three eggs in the same manner and poach until your whites are firm and your yolks are thick or approximately 2-3 minutes. Take the egg out of the water using a slotted spoon and remove any excess water with a clean towel. Place the perfectly poached egg onto the English muffin with a spoon fool of pesto on each egg. Sprinkle with a bit of salt and your caprese is ready!

In a small bowl, make your sauce by mixing 2 tablespoons of soy sauce, 1 teaspoon of toasted sesame oil, 1 ½ teaspoons of rice vinegar and a tablespoon of minced scallion greens. Set your sauce aside. In a medium skillet, heat 4 teaspoons of canola oil. Crack two eggs into a small bowl and two more eggs into another small bowl. You’re going to pour 2 eggs into one side of the pan and quickly pour the other 2 eggs into the opposite side of the pan. The eggs should flow towards each other creating one large piece. Take two teaspoons of black sesame seeds, 1 tablespoon of dried basil and ¼ teaspoon of pepper and sprinkle onto the combined eggs. Cook for about 3 minutes and carefully flip over. Cook each side until they’re crispy and brown. Pour the delicious sauce created earlier and simmer for another 30 seconds and flip again to do the same on the other side. You’re ready to eat! Rice is optional but recommended!

Tomatoes at breakfast are underrated and if you agree you will love this! Get your oven ready at 230 degrees Celsius. Cut three extra-large Roma tomatoes in half and remove the seeds. Place them on a baking sheet and carefully crack an egg into each tomato half. If you have trouble balancing, you might remove a small slice from the bottom. Sprinkle salt and pepper to your liking. If you want to spice it up, add dried red pepper flakes. Depending on your desired egg consistency, bake for 6-10 minutes. Remove from the oven and place your fresh herbs on top. Remove it and repeat for the other eggs. Serve up the asparagus with an egg on top, seasoned with salt and pepper and a sprinkle of cheese.

Crêpes:
120g / 1 cup all-purpose flour
2 eggs
120ml / ½ cup milk
120ml / ½ cup water

Filling:
1 medium apple, puréed
40g / ¼ cup raisins
23g / 2 tablespoons brown sugar
1.25ml / ¼ teaspoon cinnamon


Instructions

Crêpes:
In a large mixing bowl, whisk flour and eggs together. Slowly stir in milk and water. Mix in butter and salt, beat until smooth.
Heat a griddle or skillet to medium. Lightly oil the griddle. Drop batter onto the heated surface. Use about a 60ml / ¼ cup of batter for each crêpe. Tilt the pan with a circular motion so the batter coats the surface evenly.
Cook until golden brown, about 2 minutes; batter will slightly bubble. Flip and cook 1 minute. Carefully remove and place on a plate. To prevent sticking, put waxed paper between cooked crêpes.

Filling:
In a large bowl, combine puréed apples, raisins, brown sugar and cinnamon.

Assembly:
Fill each crêpe with a generous portion of filling. Roll and garnish with cooked apple slices, sweetened yogurt or flavored mascarpone.

Note:
You can use 240ml / 1 cup of apple sauce if you don’t want to mess with puréeing an apple. The crêpe recipe here works with any topping or filling.

Apples fritters are like dessert, but some people have them for breakfast. They are sweet yet tangy, and soft. These fritters are easy to make with exceptional results.

Ingredients

Pancakes:
2 large apples, Granny Smith or other tart variety
240g / 2 cups flour
65g / ⅓ cup sugar
15ml / 1 tablespoon baking powder
5ml / 1 teaspoon salt
5ml / 1 teaspoon ground cinnamon
1.25ml / ¼ teaspoon nutmeg
2 large eggs
30g / 2 tablespoons butter, melted
180ml / ¾ cup apple cider

Glaze:
200g / 2 cups confectioner’s sugar
60ml / ¼ cup apple cider
1.25ml / ¼ teaspoon nutmeg
5ml / 1 teaspoon ground cinnamon
Oil for frying


Instructions

In a large shallow pan, heat 700ml / 3 cups vegetable oil to 177°C / 350°F on medium-high heat.
Glaze: Mix confectioner’s sugar, cider, cinnamon and nutmeg. Set aside.
In a bowl, mix dry flour, sugar, powder, salt, cinnamon and nutmeg.
Chop peeled apples into ½cm / ¼” cubes. Add to dry ingredients and toss. Whisk 2 eggs and melted butter, then add cider. Mix until incorporated.
Measure 80ml / ⅓ cup portions of batter and drop into the oil. Only do five fritters at a time. With a large spoon, press the center down to flatten a little so the fritters are of equal thickness. Cook the fritters for 3 to 4 minutes, or until nicely browned. Flip and fry other side for 3 minutes.
Drain on a paper towel-lined baking sheet. Drizzle 15ml / 1 tablespoon of glaze over each fritter.
Cool before eating, about 10 minutes.

Note:
This is an old southern recipe. In the 18th century, apple fritters were made by soaking quartered apples in brandy or white wine, and then other ingredients were added, such as cinnamon, flour and sugar. They were then fried to a light brown and glazed.

This is a fabulous buckwheat pancake that is filled with egg, ham and cheese before it is folded over. It is quite simple to make and is a great meal when you are not sure what you want to eat.

Breton galettes also make great desserts, stuffed with fillings like bananas and agave nectar.

Ingredients

60g / ½ cup buckwheat flour
150g / 1¼ cups flour, whole meal or plain
30g / 2 tablespoons salted butter, melted
1 fresh free-range egg
180 to 210ml / ¾ to ⅞ cup water
120ml / ½ cup semi-skimmed milk
Small pinch of salt
Butter for cooking


Filling

6 thin slices of cooked ham
45g / ¾ cup grated cheese (like gruyere or cheddar)


Instructions

Combine both types of flour together. Add salt, then make a small well in the center for the egg.
Add egg in the middle, and then add the milk and half the water.
Beat with a whisk until mixture is smooth.
Add the rest of the water and melted butter. The batter should be like a thin cream.

If possible, allow the batter to rest for a 2 hours or overnight.

Heat a skillet and add a knob of butter. Move the pan around so the butter melts evenly in the pan.
Add a small ladleful of batter and quickly swirl it around. The batter should make a very thin layer and cover the whole of the pan. A palette knife or an egg slice can be used to spread out the batter. Cook for 2 minutes over medium heat, or until it comes away from the pan easily when you shake it. Toss the pancake over and cook for 1 or 2 minutes on the other side.
Flip the pancake back over and then add a very small knob of butter, a slice of ham and 15ml / 1 tablespoon of grated cheese onto one side of the pancake.
Fold in half over the filling, and then fold in half again. Cook on a very gentle heat for 1 minute, or until cheese melts.

Note: The addition of plain wheat flour improves the texture of the galettes. If you prefer gluten-free, use 150g / ⅔ cup buckwheat flour instead.

Brazilian pancakes are extra thin but not crêpe thin, or thick like heavy pancakes. However, they are a lot hardier. In fact, they are a meal in themselves. They do require a little work but are definitely worth every minute. The extra milk and a little oil make them easy to roll.

Traditionally, they are rolled up with a meat filling.

Ingredients

360g / 3 cups wheat flour
475ml / 2 cups milk
2 eggs
60ml / 4 tablespoons oil

½ tomato, diced
½ can of tomato paste
1 small carton sour cream
15ml / 1 tablespoon oregano
Salt to taste
Pepper to taste
790g / 1¾ pounds mozzarella, sliced

Instructions

Meat:

Combine meat, onion, salt and pepper. Oil a skillet on medium heat. Add meat mixture to skillet and cook 3 to 5 minutes (left alone). Stir and cook until halfway done. Add tomato, tomato paste and oregano. Reduce heat to low while you prepare pancakes.

Pancakes:

In a large bowl, mix flour and salt. Slowly add milk, then oil. Beat eggs in separate bowl then addto batter. Allow batter to rest 10 minutes.Heat a large skillet and add a little oil for cooking. Pour a couple dollops of batter on the skillet.
Cook until bubbles start to form, then flip and cook the other side.

Assembly:

Place a pancake on a plate, add meat and cheese. Roll the pancake. Garnish with green onion
and tomato then serve.
