Many sandwiches feature cheese and meat but this one goes deliciously over the top. Fire up the grill and grab some slices of sourdough bread then begin “building” your sandwich. Put the two halves together and grill your sandwich, brushing each side with melted butter. If you take this to the office for lunch, you most certainly will NOT be dining alone!

You don’t have to throw a party to prepare this special lunch treat for your kids. Make a butter and strawberry jam sandwich, then a butter and Nutella sandwich. Remove the crusts and cut each sandwich into four triangles. Arrange the triangles to form two pyramids, butter one side of each pyramid and sprinkle on 100s and 1000s (nonpareils) to stick in the butter on the strawberry jam sandwiches and chocolates sprinkle to stick on the Nutella sandwiches. You’re sure to get hundreds and thousands of “thanks” for this one!

Allowing your children to help you make this is a great way to get them on the road to a healthy eating lifestyle. Lightly toast ciabatta halves that have been drizzled with olive oil. Whisk together balsamic vinegar, mustard and some more olive oil. Before you arrange the sandwich, use this dressing on the bottom slice of ciabatta. Layer on baby spinach, artichoke hearts, red bell peppers, prosciutto, basil, mozzarella and red onion, then drizzle on more dressing and top with the other slice of bread. Use baking parchment to wrap your sandwich and string to secure it. Leave your wrapped sandwich in the fridge overnight weighed down by a loaded tray. When you’re ready to eat, just slice and serve!

Forget about the hash browns and have a real potato! Bake your potatoes until they’re almost finished, but not quite. Cut off the top of each potato and scoop out the middle with a spoon. Add a ½ tablespoon of butter into your potato bowls followed by a gently broken egg. Top off with the bacon, your favorite cheese, parsley and a little bit of salt and pepper. Place into an oven at 177 degrees Celsius for about 20-25 minutes. This amazingly simple dish will take a bit longer if you are baking your potato specifically for this, but if you have left over baked potatoes from dinner then it’s even easier!

Whole Egg, Bacon and Avocado QuesadillaSuch a quick, healthy and delicious breakfast! Love it :) – Mary
Easy but perfect, you’ll love this quick dish! Cook your bacon to whatever crispiness your heart desires in a skillet over high heat. Remove the bacon and place on a paper towel-lined plate. Also remove the excess fat and any black bits from the skillet. On medium heat, place a flour tortilla in the skillet. Arrange avocado slices around the rim of half of the tortilla effectively creating a ring to prevent the egg from leaking. Crack an egg into the middle of the ring and sprinkle with pieces of your bacon, cheese and a bit of salt and pepper. Fold the empty half of the tortilla over and cook until it’s golden and crispy. Flip but be careful not to spill the tasty contents! Cook again to the same golden color and crispiness. Serve while hot with some salsa for spiciness!
Enjoy this in just 20 minutes!
Who doesn’t love flowers in the morning? Now you can eat them! To make your breakfast flowers, start by preheating your oven to 180 degrees Celsius. Then spray 8 large muffin cups with a layer of oil and put a wonton wrapper into each cup. Add a second wonton wrapper but at an angle so that the edges of the two wrappers create your flower. Sprinkle a teaspoon of grated parmesan cheese into each cup followed by a gently broken egg. Top with diced ham, the sliced shallots and sprinkle with pepper. Bake for 15-20 minutes or until you have golden wrappers and your eggs are set. Enjoy!

Poached Eggs Caprese"Loved it! This is a definite make-again!" - Cynthia
A tasty twist on eggs Benedict! After boiling 2-3 inches of water in a large saucepan over high heat, reduce to medium-low and add the vinegar and 2 teaspoons of salt. Don’t let it get too hot, just a gentle simmer. On each half of an English muffin, place a slice of mozzarella cheese and a slice of tomato, however thick you would like. Toast in a toaster oven until your cheese is soft and the muffin is toasted. Should only be about 5 minutes. Crack an egg into the bowl and very gently slip the egg into the simmering water. Add the other three eggs in the same manner and poach until your whites are firm and your yolks are thick or approximately 2-3 minutes. Take the egg out of the water using a slotted spoon and remove any excess water with a clean towel. Place the perfectly poached egg onto the English muffin with a spoon fool of pesto on each egg. Sprinkle with a bit of salt and your caprese is ready!

Tomatoes at breakfast are underrated and if you agree you will love this! Get your oven ready at 230 degrees Celsius. Cut three extra-large Roma tomatoes in half and remove the seeds. Place them on a baking sheet and carefully crack an egg into each tomato half. If you have trouble balancing, you might remove a small slice from the bottom. Sprinkle salt and pepper to your liking. If you want to spice it up, add dried red pepper flakes. Depending on your desired egg consistency, bake for 6-10 minutes. Remove from the oven and place your fresh herbs on top.
