Gently toss 2 cups of arugula, 2 teaspoons of extra-virgin olive oil, 1/8 teaspoon of salt and 1/4 teaspoon of pepper. Set your salad aside. In a large, nonstick skillet, heat 1 teaspoon of extra-virgin olive oil. With the skillet still over medium heat, crack 4 eggs into the pan and cook for two minutes. Cover and cook for a couple of minutes more until the whites are set. After removing the eggs from the heat, combine 1/4 teaspoon of salt, 3/4 cup park-skim ricotta cheese, 1 ounce of grated fresh Parmigiano-Reggiano cheese, and 1 teaspoon of chopped fresh thyme in a small bowl and spread over your toasted bread slices. Add some of your salad and an egg to each of the bread slices and sprinkle with salt and pepper.

Arrange avocado slices around the rim of half of the tortilla effectively creating a ring to prevent the egg from leaking. Don’t let it get too hot, just a gentle simmer. On each half of an English muffin, place a slice of mozzarella cheese and a slice of tomato, however thick you would like. Toast in a toaster oven until your cheese is soft and the muffin is toasted. Should only be about 5 minutes. Crack an egg into the bowl and very gently slip the egg into the simmering water. Add the other three eggs in the same manner and poach until your whites are firm and your yolks are thick or approximately 2-3 minutes. Take the egg out of the water using a slotted spoon and remove any excess water with a clean towel. Place the perfectly poached egg onto the English muffin with a spoon fool of pesto on each egg. Sprinkle with a bit of salt and your caprese is ready!

You’re going to pour 2 eggs into one side of the pan and quickly pour the other 2 eggs into the opposite side of the pan. The eggs should flow towards each other creating one large piece. Take two teaspoons of black sesame seeds, 1 tablespoon of dried basil and ¼ teaspoon of pepper and sprinkle onto the combined eggs. Cook for about 3 minutes and carefully flip over. Cook each side until they’re crispy and brown. Pour the delicious sauce created earlier and simmer for another 30 seconds and flip again to do the same on the other side. You’re ready to eat! Rice is optional but recommended!

Simple and delicious. Just cook the pasta, the recipe uses conchiglie - the seashells pasta, drain it well and rinse. Gather, chop and mix the non-dressing ingredients; tomatoes, peppers, salami, pepperoni, olives, cheese and onion. Make the dressing and pour over your pasta salad. Done! Simple as that.

This had me at barbeque and chicken, it's a simple but tasty and filling treat that the whole family will love, taking just 15 minutes in total including the cooking of the skinless chicken breasts. The chicken takes just 3 or 4 minutes per side and should be cooled slightly before dicing and adding to the salad.
To make the salad it's just about popping the ingredients together on top of the romaine lettuce then adding Ranch dressing and a bit of that good old BBQ sauce. A final touch is adding some tortilla strips as a bit of crunch. Yum!

A lovely egg salad with added Mexico and so simple to make. Hard boil your eggs and dice, then chop your main ingredients (except the salad leaves) and mix together. Add your mayo and pop on the salad leaves you left out earlier. That is it, simple and delicious!

This is a Jamie Oliver special, slightly more ingredients than the other salads on the list but utterly yummscious. It's a quinoa and chicken salad but raised up by blackening the chicken, which helps get some real tongue-pinging flavor in there, as well as by the fresh and zesty ingredients in the salad.

Nice to get a lovely beef salad on the list and its with its peppery companion horseradish (albeit in mayonnaise form). This is supposed to be a peppery dish so add plenty of freshly ground pepper as well as sea salt to both sides of the steak before cooking to your liking and resting until the rest of the salad is ready. Next step is the horseradish mayo - just add horseradish cream and some lemon juice to your mayo. Then gently mix your salad ingredients together before slicing the steak and tossing through. Add your lovely dressing and call the family. Peppery loveliness!

This salad calls for some frozen cheese tortellini which is just cooked off according to the directions on the packet but with broccoli florets added for the final 5 minutes. There are some delicious store bought tortellini available now that can be cooked in a couple of minutes in which case just set up a
separate pan for the broccoli and give it 5 mins. Cook off the bacon at the same time and make the dressing while you're waiting for everything to cook. Cool off the broccoli and tortellin in cold water then toss in the dressing and serve on top of salad greens. Delicious and filling.

7. Beef and soba noodle salad

You need some deli-style herb encrusted beef slices for this recipe which you can earlier or simply get from the deli. Prepare the carrots, broccolini and baby corn then get the noodles cooking and with a couple of minutes left add the vegetables you prepared. Then drain them and add the coriander, the beef slices, salad leaves and dressing - toss and serve. Yum!

Delightful salad that can also be pepped up with Italian or Spanish ham - Prosciutto or Serrano.
Make the main part of the salad by blanching off some green beans then cooling and draining them. Place them in the salad bowl and add figs, sliced shallots, mozarella, hazlenuts and basil. Make your dressing seperately by mixing all the ingredients together and add it to the salad. If you're adding ham, roll the slices, place them on top of the salad and call the rest of the family together.

This was originally Whole Food’s California quinoa salad but Chungah gave it a 'Damn Delicious' facelift.
It's so simple to make, just cook off the quinoa according to the instructions on the packet. Whisk up the balsamic vinegar and lime zest dressing. Then chop, slice and combine the rest of your ingredients along with the quinoa. Finish off by tossing through the dressing and serve. Damn Delicious!

10. Teriyaki Salmon on Soba Noodle Salad

This is absolutely delicious, a real star dish.
Prep up your veg then set the noodles off cooking and rinse to cool when they're cooked (5 minutes or until soft). Get a pan medium-hot and cook the salmon skin-down for about 3 minutes then turn and cook for 1 minute. Add teriyaki sauce to the pan you've been using and cook for a minute or so to thicken it up slightly. Make a mirin dressing by whisking the mirin seasoning, lime juice, soy and oil.
Finally you just need to combine the noodles and the veg you prepped earlier and add the dressing. Pop the salmon on the noodles and add a few sesame seeds. Delicious!

Another salad from Damn Delicious, this one's a BLT coming to you via the medium of salad with a tangy lime vinaigrette pepping things up a little.

Make the vinaigrette by whisking olive oil, lime zest, lime juice, apple cider vinegar and a couple of teaspoons of sugar. Cook some crispy bacon, dry by placing on top of some paper towels before dicing. Then bring together the romaine lettuce, avocado, tomatoes, goat cheese and the bacon you've diced before finally dressing with the zesty lime vinaigrette. Gorgeous!

Simple, yummy and also very yummy - too many yummys? No chance! This had me swooning like an Edwardian lady with a new extra-slimming corset. It's called a mousse cake but it could also be called a no-bake cheesecake.


As it's a cheese cake with UK origins the recipe calls for McVitie's Digestive Biscuits, if those aren't immediately available to you one of the best alternatives are Carr's whole wheat cracker (McVitie's Digestives are available in the US at Amazon
Making the cake involves crushing the biscuits and mixing with melted butter to form the base then refrigerating for half an hour to make it solid. Blast some of the strawberries, add cream and soft cheese before combining with some melted chocolate and pouring the mixture onto the base. Leave it to chill overnight, then use the remaining chocolate and strawberries to beautify it. Deliciousness!

This is a deliciously simple 4-ingredient mousse. All you need is pureed strawberries, powdered sugar (aka icing sugar), vanilla extract and whipping cream.

The recipe suggests strawberry sauce but pureeing fresh strawberries is better, best to do that first so you're ready to add them later. Whisk the whipping cream until it's forming strong peaks then add the sugar and vanilla. Once that's mixed in, we just fold the strawberry puree in gently so the cream doesn't over mix or begin to fall.
That's the main job done, all that's left is adding the mousse to glasses or bowls and cooling for an hour. Then it's up to you to tune into your inner Salvador Dali and decorate with a flourish.

The mixture is now worked until crumbly and added on top of the strawberries. Add a few cubes of butter and that's it ready to go in the oven. As the title says - simple strawberry cobbler!

Similar to the cobbler but this crumble has the added almond taste to possibly take it up a notch. The preparation may even be simpler than the cobbler.

Hull the strawberries, pop them in your bowl and add sugar, almonds and vanilla extract. Then prepare the crumble mixture by rubbing butter into a mixture of flour and baking powder. Add the crumble on top of the strawberry mix, flatten it down a bit and make sure the covering is equal then pop it in a pre-heated oven for about 30 minutes or until the crumble has turned a delicious golden brown. Take out and cool and that is it, simple!

Firstly add the sugar and water together and heat until the sugar is dissolved. Then add lemon and salt. Pop the strawberries and syrup together and blend up, strain and cool. After that it's all about adding the mixture to your ice cream maker and creating a delicious smooth sorbet.
