Fresh arugula (aka rocket) is one of those delicious salad ingredients that tells you that at last spring has sprung and summer is on its way. We have gathered some of the best, quick and easy arugula salads for you to delight the family as well as some wonderfully simple arugula pasta recipes and not forgetting a couple of easy to make arugula pizzas.

1. Apple Pecan Arugula Salad

A delicious combination of apples, pecans, arugula, red onion and if you're up for it - cranberries. Prep is simple as it's just a matter of making the lemon vinaigrette (lemon, maple syrup, olive oil and salt and pepper) then toasting the pine nuts and tossing everything together. Lovely!

This is a wonderful side dish to accompany any meal, with the ingredients blending together beautifully with a simple dressing. Alongside the arugula it includes; cherry tomatoes, pine nuts, avocado and parmesan as well as a delicious rice vinegar and olive oil dressing.

Preparation couldn't be simpler, just pop all the ingredients (except the avocado) together and mix. The avocado left to one side can now be sliced over the top of the salad to help attract the hungry hordes (not that they need much attracting).

5. Penne Pasta with Brown Butter, Arugula, and Pine Nuts

7. Fresh Tomato and Arugula Pasta

This is a similar recipe to the previous one in terms of how it's made and as with the linguini recipe it's filling enough to be perfect for lunches or dinners.

You begin cooking the pasta then get a frying pan or skillet and cook off the onion and garlic in olive oil, add chopped tomatoes and red pepper before stirring it through the arugula. Once you've drained the pasta it's just a question of adding the skillet ingredients and topping with pine nuts and slivers of parmesan.

Cooking the pasta takes the most time and for everything else it's all just a matter of popping it in bowls and mixing. First mix the main ingredients arugula, capers and Parmesan. While you are waiting, make the arugula dressing and toss it through the leaves, then just top the pizza with it. Simple and delicious as that!

10. Arugula Pizza with Poached Eggs

This is another of those delicious titles that gets my saliva buds saliving*. It may just be the mention of poached eggs or it may be too close to lunch time but I need to eat this now! 

You can use ready-made pizza dough or use the flatbread trick from the previous recipe to form the base. If you do use the flatbread trick remember not to cook for as long.

Start cooking the base then add the cheese and return to the oven. Cook your poached egg as you like it and toss the arugula with the rest of the ingredients. Then just take out your base and top with the arugula and egg. Delicious!
