Here is a colorful dish that’s sure to please. While the fettuccine cooks, sauté the scallops and shrimp until the scallops are opaque and the shrimp in pink. Set it aside and keep it warm. Sauté shallots until tender, add the garlic then the broth and wine. Let it boil then leave it to simmer until most of the liquid disappears. Stir in the cream and cook uncovered until thick. Stir in the drained pasta then add in the scallops, shrimp and cheese. Toss to coat, add a sprinkle of parsley and tomato then grab a fork and dig right in!

This dish truly takes MINIMUM effort. Stir together black beans, tomatoes, green chillis, corn, green onions, vinegar and oil. Set it aside. Sprinkle the fillets with salt and cook them in a hot skillet sprayed with oil. Serve topped with the bean -corn mixture. Easy!

Cook the apricot with scallion whites, ginger and some salt until softened. Add water, let it boil and stir in the couscous. Cover it and set it aside, then fluff it with a fork once the liquid is absorbed. Season the salmon with salt and pepper and place it on a heated grill rack or in a heated boiler pan to brown and cook through. Serve the fish on top of the couscous and top it with the sauce. A sprinkle of cashews adds the final flair.

Stir heavy cream into the sauce when most of the wine has evaporated and then add in the shrimp. To serve, toss the pasta in the sauce and sprinkle on some Parmesan. Sooo tasty!

Add wine and simmer until most of the liquid evaporates. Stir in stock and corn flour then season. Add dill and the seafood, let it simmer, then stir in some crème fraiche. Serve in warm bowls with prepared garlic bread and a sprinkle of dill. Comfort food!

Stir in Parmesan and butter then remove the grits from the heat and season again with some more salt and pepper. Cover and keep it warm. Add garlic cayenne pepper and seasoned shrimp to a pan with melted butter. Toss while cooking until the shrimp turns pink. Stir in water, parsley and lemon juice. Serve by topping the grits with the shrimp, sauce and lemon wedges.
