Here is a colorful dish that’s sure to please. While the fettuccine cooks, sauté the scallops and shrimp until the scallops are opaque and the shrimp in pink. Set it aside and keep it warm. Sauté shallots until tender, add the garlic then the broth and wine. Let it boil then leave it to simmer until most of the liquid disappears. Stir in the cream and cook uncovered until thick. Stir in the drained pasta then add in the scallops, shrimp and cheese. Toss to coat, add a sprinkle of parsley and tomato then grab a fork and dig right in!

Cover it and set it aside, then fluff it with a fork once the liquid is absorbed. Season the salmon with salt and pepper and place it on a heated grill rack or in a heated boiler pan to brown and cook through. Serve the fish on top of the couscous and top it with the sauce. A sprinkle of cashews adds the final flair.
