Shape the meat into balls and place them in the baking dish. Bake them for 15 minutes, turn them and bake for 5 minutes more. Have some pasta and sauce ready and dinner is served!

Roll the mixture into balls and brown them all over in a little heated oil. Saute finely chopped celery and carrot along with more of the onion and garlic. When the onion is softened, add chopped tomatoes and beef stock. Let it boil then reduce it to a simmer and cook until the vegetables are tender. Place the meatballs in the soup and continue to let it simmer until they are heated through. To serve – season your tasty soup with salt and pepper then top it with chopped parsley. Goes great with crusty bread!

You won’t be missing the meat in these cauliflower-quinoa balls. Boil cauliflower in water until fork-tender. Drain and pulse them in a food processor with cooked quinoa or brown rice until semi-smooth. Place the mixture in a bowl and mix in eggs, your choice of spices, a dry ingredient such as breadcrumbs, almond meal or oat flour and salt. Form your “meatballs” and brown them in a little heated olive oil. Serve with your favorite sauce or salad and dig in!

Need to wow everyone at the dinner table?  Soften finely chopped onion in heated oil then add some crushed garlic, cumin and coriander and cook some more. Set aside half of the mixture to cool while you add chopped tomatoes, salt and pepper to the rest of it to make a sauce. Allow it to simmer and reduce.  To the cooled onion mixture, add some finely chopped mint, lean lamb mince, finely chopped apricots and breadcrumbs. Season it with salt and pepper before forming it into balls. Fry the meatballs in heated oil then add in the sauce and allow the meatballs to cook through. WOW!

This quick, easy and filling soup is the perfect way to end a hard day. Combine ground beef chuck, grated parmesan cheese, freshly chopped parsley, a lightly beaten egg, grated garlic, salt and freshly ground black pepper. Shape into balls and cook them in heated oil until golden. Set the meatballs aside and add diced carrots and celery to the oil. Let them soften before adding some chicken stock. Let it boil then add some more parsley and salt. Reduce to a simmer and after the meatballs are cooked add some cheese tortellini. As the tortellini begin to float, add some baby spinach to wilt, then some salt and pepper. Top with grated parmesan cheese and serve. It’s comfort food time!

You can use your own homemade frozen meatballs in this delicious dish. Start with a can of pineapple chunks. Drain the pineapple juice and add it to some water, soy sauce, vinegar and brown sugar. Mix until smooth then cook it (stirring constantly) until it thickens. Add in the meatballs, pineapple chunks and green pepper then let it cook until the meatballs are heated through.  Enjoy!

Kids will love helping to make (and of course, eat) these! Mix together breadcrumbs, minced fresh basil, salt, ground sirloin, a large egg and minced garlic. Make the mixture into balls and set them aside. Cut the rolls and lightly toast them before setting them aside. Broil the meatballs in a pre-heated broiler until they are brown. Turn them over and brown the other side. Place two meatballs on half a roll, top with thin slices of mozzarella cheese and broil them until the cheese melts. Heat the marinara sauce in the microwave and spoon it over the cheesy meatballs. Top with a basil leaf and the other half of the bun.  These are great any day of the week!

Refrigerate them for half an hour then fry them in heated oil until browned and cooked through.  Set the meatballs to drain on paper towels then serve them up to the hungry crowd!
