They say you can cook chicken in 1000 ways, well it seems eggs are even more versatile and these 10 quick and easy egg recipes prove it! Whether in your breakfast, lunch or dinner, salads, soups or dessert you can use nutrient-rich eggs in just about any dish you prepare.

Crunchy French Toast

Hey! French toast shouldn’t be crunchy … but this does it so well! Beat the eggs and milk together then soak the bread in the mixture one slice at a time. Dip the bread into the peanut so each side gets a nice layer. Place one slice in a hot skillet coated with cooking spray and cook until egg is set. Clean the skillet and repeat for the rest of the slices. Great with fruit.

2. Breakfast Biscuits

This recipe makes me want to go camping – not sure why! Preheat the oven and bake the biscuits until they are golden brown. Evenly brown the bacon in a deep skillet and set aside to drain. Beat together the eggs and milk and scramble them in a skillet coated with oil. Cut open the biscuit, butter lightly then layer on the bacon, eggs and cheese. Feel free to belt out a couple verses of a great camping song to go with it.

3. Eggs with Chickpeas, Spinach, and Tomato

This dish looks and tastes great. Coat a heated skillet with oil and stir fry shallots, red pepper, rosemary and garlic until the shallots are tender. Add marinara sauce and chickpeas. Let it simmer then add spinach, salt and black pepper, giving it a stir. Next, break the eggs over the mixture and leave it to simmer gently. When the egg whites are almost set, cover and cook until they set. Sprinkle shredded pecorino Romano cheese on top. Serve. Enjoy!

4. Minced Beef with Bok Choy and Fried Egg

Ready for a delicious taste of the Orient? Combine sugar, Thai chili paste, fish sauce and soy sauce. Coat a heated skillet (or wok, if it feels more authentic) with oil, then stir-fry the garlic, add the beef and stir-fry some more. Once the beef is cooked, add the soy mixture and let it thicken. Place the beef on a plate and stir-fry the pepper and bok choy. Wipe the pan and cook the eggs until the whites are set. Serve with one egg atop rice, beef and bok choy. Simply fantastic!

This dish is just too easy. Cover and cook black beans until they are heated through. Beat the eggs and scramble them in a hot skillet with vegetable oil. Warm the tortillas in a microwave or oven, lay them flat and spoon on the black beans, eggs, cheese and salsa. Roll it up into a burrito and then choose – either eat it now or let it cool and freeze it for reheating the next day. It’s great both ways but I’m all for eating it now!

6. Avocado-Egg Salad Sandwiches with Pickled Celery

Here’s to letting your inner ‘super chef’ shine through. Steam eggs in a vegetable steamer, remove when done and place in ice water. Mix and microwave water, vinegar and sugar, add celery and leave for 15 minutes then drain. Stir together avocado, mayonnaise, juice, mustard, pepper and salt until smooth. Peel and chop the eggs then gently combine them with the celery, sunflower seeds and avocado mixture. Use to make sandwiches along with bread, arugula and tomato slices. Yum!

7. Chunky Egg Salad

Great to make then have with anything. Soak the onion for 15 minutes in cold water then drain. Boil the eggs and after they are cooled, peel and cut them into six each. Combine the onion, celery, dill, mayonnaise, lemon juice, mustard, and salt in a large bowl. Add the eggs and a sprinkle of pepper. Now comes the fun part – have it in a salad, as a sandwich, by itself, whatever!

If you really want to impress dinner guests with something that looks classy (but was super easy to make) try this. Cook asparagus in boiling salt water until they are tender-crisp. Put them in a plate and cover it to keep it them warm. Add vinegar to the asparagus water, swirl it around and carefully pour one egg in the middle. Cook for about 4 minutes. Remove it and repeat for the other eggs. Serve up the asparagus with an egg on top, seasoned with salt and pepper and a sprinkle of cheese.

9. Spaghetti With Herbs, Chilies, and Eggs

You can’t go wrong with this super easy dish. First, cook the spaghetti, drain the water and return the spaghetti to the pot. Next, get your garlic sizzling in some olive oil, then toss it with the spaghetti and herbs. Cook the eggs in a little olive oil till the whites have set and serve them up on top of the spaghetti with a sprinkling of parmesan cheese. Comfort food!

Beat the eggs and milk until they are smooth then add in the bacon, cheese, onion, salt and pepper. Pour the mixture into a skillet with melted butter and cook until done. Everyone will want seconds … may be even thirds.
