Here’s a delightful one pot meal that comes together with very little fuss. Sauté chopped onions and carrots until soft. Add chopped garlic and curry powder and cook until fragrant giving it the occasional stir. Add uncooked white rice, water, salt and pepper. Allow it to boil then reduce to a simmer and let the rice steam. Before the rice is done cooking, season large deveined shrimp with salt and pepper then set them in the rice. Continue cooking until the shrimp are done then fold in some fresh basil and serve. It’s another delicious way to do a tasty shrimp curry.

You can blend the curry at this point if you wish or simply leave it on low to simmer and reduce while you add whatever vegetables you have on hand such as potatoes, red pepper, kale and squash. Serve the rice topped with the fish and a drizzle of sweet chilli sauce. Scatter some sliced red chilli around it, add some cooked thin-stemmed broccoli and lime wedges. Tofu lovers can enjoy the crispy addition it makes to this curry. Begin by pressing the water from extra firm tofu. Prepare the soup by stir frying chopped onion, smashed garlic and grated ginger. Add red curry paste, turmeric, sugar and salt then stir fry some more. Next in are the baby potatoes, coconut milk and vegetable broth. Simmer to soften the potatoes then cool the soup slightly before pureeing it to a silky smooth texture. Stir fry cubes of the tofu until lightly browned, carefully adding a little of the soup to give added color and to caramelize the outside of the tofu. When golden brown and crispy, use the tofu and whatever fresh vegetables you have on hand to top bowls of your soup along. Comfort food curry!

Stir in whole cloves, minced garlic, ground cumin, finely chopped ginger, cinnamon sticks, cayenne pepper, ground coriander, ground turmeric and salt. Cook and stir for a minute before adding in the chickpeas. Continue stirring until blended and heated through. Remove from the heat and stir in some cilantro (coriander leaves). Serve up the dish with a garnish of more cilantro for an extra lemony tang to your meal!

Sauté minced garlic and finely chopped onion then add curry powder and cook for a few minutes. Lower the heat and stir in coconut milk, honey, lime juice and salt. Allow to come to a gentle boil then add in the shrimp, give them a toss and leave the curry to simmer and thicken. You may add more honey, lime juice or salt to suit your taste then finally stir in some chopped fresh basil leaves. If you wish, use a little hot sauce to spice up your lovely curry then serve it over cooked rice garnished with more of the basil.

Curried Shrimp with Peanuts

No matter how you prepare it, a good shrimp curry will always be a crowd-pleaser. Whisk flour and curry powder into melted butter to get a smooth consistency. Let it cook for a minute then slowly whisk in some milk, chicken broth, ketchup, seeded and chopped jalapeño pepper and grated fresh ginger. You can also add dried crushed red pepper if you desire more spiciness in the dish.

Turn up the heat and whisk the curry constantly as it cooks for a few minutes. Allow it to thicken then stir in peeled large, raw shrimp that’s been deveined. Add lime juice and salt, reduce the heat and cook some more, remembering to give it a stir every now and then. You’ll know it’s done when the shrimp turn pink. Serve with a topping of salted cocktail peanuts along with any combination of bean sprouts, cilantro and toasted unsweetened coconut flakes. Juicy shrimp, crunchy peanuts and a lot of great flavor!
