An omelette is one of those dishes that lets you fit easy, quick and nutritious into one tasty meal. What’s more, you can serve an omelette at any time of day; effortlesssly customize each person’s serving; and go from basic to sophisticated by just tweaking the ingredients list a bit.

One other great thing about omelettes is that they’re a good way for everybody (especially kids) to chip in and help to get dinner on the table at the end of a hectic day. Mushrooms add bulk and earthy flavor to this omelette. Fry button mushrooms in a hot pan with a little oil. Place them in a bowl and add grated cheddar cheese and chopped parsley. Pour beaten eggs into the pan and cook until sufficiently set, swirling occasionally. Add the mushroom mixture to one half of the omelette and fold it. Cook the omelette a little more, and then serve. It goes great with a salad and some freshly baked oven chips.

This simple omelette is packed with some very bold tastes. Whisk eggs and salt then set it aside. Cook brown mustard seeds and some turmeric in heated oil, stirring often for a few seconds or until the seeds pop. Add tomatoes and cook some more before pouring in the eggs. As the edges of the egg begin to set, slide it away from the sides allowing the liquid to flow underneath. When the center is almost set, fold the omelette in half. Serve with a sprinkle of black pepper. That’s flavorful!

If ever an omelette qualified as comfort food, then this is it. Fry some shredded cabbage, thin carrot strips and sliced onion until they are limp, then set them aside. Beat eggs, soy sauce and a chicken bouillon cube and set that aside as well. Make the sauce by heating a mixture of water, soy sauce, another bouillon cube, corn flour, salt and pepper until it boils, then let it simmer for a couple minutes. Time now to put the omelette together – so, pour the egg mixture into a heated pan, sprinkle the vegetable mixture all around , cover it and let it cook on low heat until it is set to your preference. Fold the omelette in half and serve with a topping of the sauce. Saucy, indeed!

Just by rolling instead of folding, you can add a whole new appealing dimension to your omelette. Whisk together eggs, flour, milk, salt and pepper. Pour the mixture into a greased baking dish and bake it in a pre-heated oven until the egg sets. Sprinkle diced ham and shredded Colby-Monterey Jack cheese on top then bake the omelette some more to melt the cheese. Carefully roll the omelette tightly with the help of two small spatulas. Here’s a not-so-sneaky way to add greens to your family’s diet. Cook spinach in little water until wilted. Set it in a colander to drain and remove as much water as you can before chopping it up finely. Whisk the chopped spinach with the egg and season with salt and pepper. Add this mixture to a heated skillet with melted butter and stir it until the eggs start to set. Pull in the edges and allow the liquid mixture to flow underneath. Continue cooking until almost set then top it with shredded sharp cheddar cheese and thin slices of deli ham. Fold the omelette in half and serve. Kids will simply gobble this one up!

If you are in the mood for a light dinner, then this omelette will do just fine. Sauté some slices of Champignons de Paris mushroom and set them aside. Whisk the eggs until they are very frothy, then add some crème fraiche, chopped chives, sea salt and crushed white peppercorns. Pour the egg mixture into a pan with melted butter and allow it to cook until the edges are set. Add the mushrooms and flip the omelette in half as you slide it out onto a plate. Divide the servings then garnish each one with more chopped chives. Great with a fresh green salad!

7. Chinese Omelette

This spicy Asian classic is a definite crowd-pleaser. Cover thinly sliced snow peas with boiling water for 3 minutes, drain them and rinse under cold water. Mix them together with some beansprouts along with thinly sliced green onion and red chilli pepper. Set it aside. Make your sauce by mixing oyster sauce, hot water, grated ginger and crushed garlic and set it aside as well. Heat up your wok (or skillet) and pour in the egg mixture and allow it to just set before sliding it out onto a plate. Repeat for the second omelette, Cover half of each omelette with the snow peas mixture, fold and serve with a drizzle of the sauce. Healthy never tasted this good!

This spicy omelette will add some heat to those chilly nights. Mix together eggs, dried oregano leaves, half-and-half (half cream), salt and pepper. Pour the mixture into a skillet with melted butter and stir with a fork until the egg begins to set. When the bottom of the omelette is lightly brown, give it a sprinkle of shredded Monterey Jack cheese with jalapeño peppers and some chopped green chilies. Fold and serve with toppings of chopped tomatoes, sour cream and a sprinkle of cilantro, if desired. It’s spicy and it’s so good!

Add some cherry tomatoes and mash them along with the fennel before mixing in chopped olives. Season with salt and pepper and set the mixture aside in a bowl. Heat some oil in the same skillet and pour in beaten and seasoned eggs. As it sets lift the edges to let the liquid egg run underneath. Add crumbled goat cheese Provencal, the fennel-tomato mixture, chopped fresh dill and more cheese to half of the omelette then fold it. Use fennel fronds to garnish it then serve and enjoy the simple flavors of the Mediterranean.

This Aussie omelette takes things up a notch. Sauté onion, bell pepper, garlic and mushrooms until tender. Add the shrimp and allow them to cook until they turn opaque. Set aside and start on the eggs, first beating them along with milk then adding curry powder, salt and pepper. Pour the mixture into a heated skillet and cook until firm. Top with Cheddar cheese, onion, tomato and the shrimp mixture. Fold, serve, grab a fork and jump right in, mates!
