Here’s a great recipe to have on a special day or with a special guest or just because! Whisk together eggs, chives, black pepper and milk or water. Pour into a pan of hot melted butter and scramble by allowing the edges to set then pushing them inward. Repeat until almost done. Add salt and cream cheese, stirring to combine until cooked to desired doneness. Lay 2 slices of prosciutto on a plate, allowing them to overlap slightly. Spoon on some egg and wrap the prosciutto like a burrito. Sprinkle with chives and serve your elegant and yummy creation.

Make your scrambled eggs a little heartier with this dish. Cook cubed red potatoes in boiling water until they are tender. Drain them and set them aside. Beat together eggs, salt, pepper and some milk and set them aside as well. Fry the potatoes in melted butter until browned and then stir in some onion and fry some more. Pour in the beaten eggs and gently begin to scramble them once they start to set. When the egg is completely set sprinkle on some bacon, serve and bask in the rave reviews!

Coat muffin cups with cooking spray and spoon in the egg and sausage mixture. Bake in a preheated oven until done.
