Easy Mashed Potato Recipe

1. Basic Mashed Potatoes

Nothing fancy here, just soft and creamy mashed potatoes that you can pair with anything! Boil a pot of salted water then add some peeled and quartered potatoes to cook until they are tender but still somewhat firm. Drain them and set aside. Heat milk and butter on low heat until the butter melts. Slowly blend this mixture into the potatoes using an electric beater or potato masher. When the potatoes are smooth and creamy, season them with salt and pepper. Serve with your favorite main dish.

Add buttermilk for a creamy consistency and some salt and pepper to taste. Serve hot!

Wasabi horse radish adds (a lot of) spice to these mashed potatoes. Add peeled chunks of potatoes to boiling salted water and cook then until tender. Make a paste of wasabi powder and water then set it aside as you drain the potatoes and return them to the pot. Mash the potatoes with butter until smooth, add heavy or half-and-half cream and mix until the potatoes are creamy. Add the wasabi paste and some salt then mash once more. Serve them hot and they’ll go really well with any Asian themed dish you prepare.

A little jalapeño heat spices up these mashed potatoes. Peel and halve the potatoes. Place them in a pot of cold water and bring it to a boil then let them simmer until tender. Drain then mash them in bowl until creamy. Add coarsely grated cheddar cheese, thickened cream and coarsely chopped jalapeño chillies. Give it one final good stir and serve. Heat together some milk and butter then add it plus some wholegrain mustard to the potatoes. Sauté sliced spring onions in butter until soft and fold it into the potatoes. Serve. So yummy!

7. Cauliflower Mashed Potatoes with Mushroom Gravy

Cover whole red skin potatoes in cold water, bring to a boil then allow it to simmer until tender. While the potatoes are cooking you can steam the chopped cauliflower over them in a strainer covered with a lid. Mash the potatoes and cauliflower together with salt, pepper and a little butter. Begin the gravy by sautéing minced shallots and some white or cremini mushrooms until the mushrooms are soft and brown. Stir in flour, reduce the heat and cook some more. Add veggie broth while whisking then add thyme and whisk some more and allow it to simmer. Season the gravy with salt and pepper and serve it over the potatoes. Wow!!
