You won’t be missing the meat in these cauliflower-quinoa balls. Boil cauliflower in water until fork-tender. Drain and pulse them in a food processor with cooked quinoa or brown rice until semi-smooth. Place the mixture in a bowl and mix in eggs, your choice of spices, a dry ingredient such as breadcrumbs, almond meal or oat flour and salt. Form your “meatballs” and brown them in a little heated olive oil. Serve with your favorite sauce or salad and dig in!

Set aside half of the mixture to cool while you add chopped tomatoes, salt and pepper to the rest of it to make a sauce. Allow it to simmer and reduce.  To the cooled onion mixture, add some finely chopped mint, lean lamb mince, finely chopped apricots and breadcrumbs. This quick, easy and filling soup is the perfect way to end a hard day. Combine ground beef chuck, grated parmesan cheese, freshly chopped parsley, a lightly beaten egg, grated garlic, salt and freshly ground black pepper. Shape into balls and cook them in heated oil until golden. Set the meatballs aside and add diced carrots and celery to the oil. Let them soften before adding some chicken stock. Let it boil then add some more parsley and salt. Reduce to a simmer and after the meatballs are cooked add some cheese tortellini. As the tortellini begin to float, add some baby spinach to wilt, then some salt and pepper. Top with grated parmesan cheese and serve. It’s comfort food time!

Get kids involved in this meal by setting up an assembly line at the end! Sauté ground beef until browned then add salsa and black beans. Let it cook until most of the liquid has evaporated and set it aside. Warm the tortillas by shaping them over inverted ramekins and placing them in a pre-heated oven. Put the tortillas to stand on their own right side up (like cups) and warm them some more until browned. Set the tortillas aside as well. Gently toss together some chopped tomatoes, fresh cilantro and fresh lime juice with olive oil. Set it aside, too. Mix together some sour cream and adobo sauce and get that assembly line ready to build your tacos. Place a lettuce leave in a tortilla “bowl”, add the beef mixture, sprinkle with Mexican cheese blend. Top each taco with the avocado and sour cream mixtures. Olé!!

Chicken Marsala:

Ingredients:

2 boneless, skinless chicken breasts
1 tablespoon vegetable oil
1 egg, beaten
¼ cup flour
¼ cup Marsala wine
¼ cup diced onions
4 ounces button mushrooms, sliced
¼ teaspoon salt
¼ teaspoon pepper
4 ounces angel hair pasta

Directions:

-Heat oil in a frying pan on medium heat, and preheat oven to 350 degrees.
-Mix flour, salt and pepper together.
-Dredge chicken breasts in flour mixture, and then dip in beaten egg.
-Carefully place in hot pan, and cook on both sides until golden brown.
-Place chicken on a baking sheet and place in the oven for 15 minutes, or until internal temperature is 160 degrees.
-Bring a pot of salted water to a boil, and cook angel hair pasta according to package directions. Drain when finished.
-Add the onions to the frying pan, and briefly sauté.
-Add Marsala wine, and bring to a boil.
-Add sliced mushrooms & stir. Cover and simmer for 2-4 minutes.
-Serve the chicken on top of angel hair pasta, and top with the mushroom mixture.

½ pound green beans, ends trimmed
2 tablespoons butter

Directions

-Bring a half inch of water to a boil in a saucepan.
-Add green beans, cover, and cook for 3-5 minutes, or until green beans are tender.
-Drain excess water, and add butter to green beans. Season with salt and pepper to taste.

Spinach & Feta Salad with Warm Bacon Dressing

Start off your romantic meal with a salad that packs a flavor punch!

Ingredients:

6 ounces baby spinach, washed
4 strips of bacon
2 hardboiled eggs, sliced
¼ cup Feta cheese crumbles
2 tablespoons chopped walnuts
3 tablespoons red wine vinegar
1 ½ tablespoons sugar
1 teaspoon Dijon mustard

Directions:

-In a large skillet over medium heat, fry the bacon strips until crispy and fat is fully rendered out. Remove bacon from skillet, and save bacon grease on the side.
-Chop bacon into small pieces, and set aside.
-Transfer the bacon grease to a small saucepan; heat on low.
-Whisk in vinegar, sugar and Dijon mustard. Lightly season with salt & pepper
-In a large bowl, mix spinach, crumbled bacon, sliced eggs, Feta cheese, and walnuts.
-Drizzle dressing over the top of the salad until just moist, and not soggy.
-Serve.

Rosemary Pork Chops with Goat Cheese Mashed Potatoes and Roasted Brussel Sprouts

Rosemary Pork Chops are a simple & delicious way to start off your main course. If you don’t have a broiler pan, you can substitute a baking sheet with a metal cooling rack on top.


Rosemary Pork Chops:

Ingredients:

2 bone-in pork chops (about ½ inch thick each)
2 teaspoons garlic paste
1 teaspoon chopped fresh rosemary
1 tablespoon olive oil
1 tablespoon lemon juice
¼ teaspoon salt

Directions:

-Preheat the broiler in your oven.
-Mix garlic paste, rosemary, oil, lemon juice and salt together. Rub mixture all over the pork chops, and place on a broiler pan.
-Place pan under the broiler, about 4 inches from heat, for 4-5 minutes.
-Turn over, place under the broiler again and cook for an additional 4-5 minutes, or until internal temperature reaches 145.
-Remove from broiler, and let rest for 5 minutes before plating.

 
Goat Cheese Mashed Potatoes

A little bit of goat cheese goes a long way! It will add a creamy, tangy layer of flavor to your mashed potatoes.


Ingredients:

1 ½ pounds russet potatoes, peeled and cut into small chunks
½ cup whole or 2% milk
3 tablespoons butter
½ teaspoon salt
¼ teaspoon ground black pepper
2 ounces soft fresh goat cheese, crumbled


Directions

-Cook potatoes in a large pot of boiling water until tender – about 8-10 minutes. Turn off heat, drain potatoes, and return potatoes to the pot.
-Add milk, butter, salt and pepper, and mash potatoes with a potato masher or hand mixer.
-Add goat cheese to mashed potato mixture, and stir until just blended.
-Serve.

  
Roasted Brussel Sprouts

If you don’t usually like Brussel sprouts, give this recipe a try! Roasting Brussel sprouts brings out deeper, more complex flavors than steaming them. 


Ingredients:

1 pound Brussel sprouts
1 ½ teaspoon vegetable oil
1 ½ teaspoon Balsamic vinegar
¼ teaspoon salt
¼ teaspoon ground black pepper


Directions

-Preheat oven to 425 degrees
-Chop off any rough stems, and cut each Brussel sprout in half lengthwise.
-Toss with oil, vinegar, salt and pepper, and place cut-side down on a baking sheet.
-Roast for 15-20 minutes, or until tender and caramelized on the outside.

Strawberry and Chocolate Ice Cream Sundaes

Making your own strawberry topping is a great alternative to purchasing pre-made toppings, and adds a special touch to your meal!

Ingredients:

1 pint vanilla bean ice cream
1 cup fresh strawberries, sliced
1 tablespoon butter
1 tablespoon sugar
½ cup chocolate chips
Whipped cream
Chocolate sprinkles, for garnish.

Directions:

-In a medium saucepan, melt butter over medium heat. Add strawberries and sugar, and cook for 3-5 minutes, or until reduced & strawberries are soft.
-Melt chocolate chips in microwave, or over a double boiler, stirring occasionally.
-Place one large scoop of ice cream in each sundae dish, and top with strawberry mixture. Drizzle each sundae with melted chocolate, and top with whipped cream and sprinkles.

Pan-Fried Cream Cheese Wontons

Creamy on the inside, crisp on the outside... delicious!

Ingredients:

8 Wonton Wrappers
½ cup cream cheese, softened
1 teaspoon sugar
1 teaspoon soy sauce
½ teaspoon ground ginger
1 green onion, diced
Oil, for frying

Directions:

-In a medium bowl, combine cream cheese, sugar, soy sauce, ginger and green onion.
-Place wonton wrappers on a flat surface. Using a small spoon, carefully spoon cream cheese mixture into the middle of each wrapper.
-Moisten edges of wonton wrappers with water, and fold each wrapper in half diagonally, making a triangle.
-Press around edges to seal.
-Heat oil in a large skillet over medium to medium-high heat. When oil reaches 350 degrees (or bubbles when a wonton is put it), carefully place four wontons at a time in the skillet, careful not to overcrowd.
-Fry wontons for one to two minutes on each side, or until each side is light brown.
-Carefully remove from oil and let drain on paper towels. Repeat with second batch of wontons.
-Serve warm.

Orange Chicken with Asparagus & Almonds, and Steamed Rice

This classic stir fry dish is full of flavor and will tease your taste buds.

Ingredients:

2 boneless, skinless chicken breasts
1 tablespoon vegetable oil
1 tablespoon cornstarch
¼ cup onion, sliced
2 cloves of garlic, minced
½ teaspoon ground ginger
½ cup chicken stock
2 tablespoons frozen orange concentrate
2 teaspoons soy sauce
1 bunch of asparagus, ends trimmed
Slivered almonds, to garnish

Directions:

-Cut the chicken into strips, about 2 inches long, and dust with the cornstarch
-Heat the oil in a frying pan over medium heat, and sauté the onion and garlic for one minute.
-Add the chicken strips, and stir. Season with the ground ginger
-Cut asparagus into ½ inch long pieces.
-Add chicken stock, orange concentrate, soy sauce, and asparagus. Bring to a boil, and simmer for 2-3 minutes, or until asparagus is tender. Turn off heat.
-Season to taste, if needed, with salt and pepper.

 
Steamed Rice

Basic steamed rice, but with chicken stock for added flavor. 


Ingredients:

1 cup of long grain white rice
2 cups of chicken stock
1 tablespoon butter


Directions

-In a medium saucepan, melt butter over medium to medium-high heat
-Add in rice, and toast in butter for 2-3 minutes, being careful not to burn the rice.
-Add in chicken stock & stir.
-Bring to a boil; stir, cover with a lid, and turn heat down to low.
-Cook for 15 minutes, or until rice is tender.
-Remove from heat and fluff with a fork.
-Serve
