  • 2¼ cups chicken (or vegetable) broth
  • ¼ cup tomato sauce
  • 1 Tbsp fresh lemon juice
  • ½-1 tsp Cajun seasoning
  • 1 cup quinoa
  • 3 stalks of green onion
  • 1 Tbsp minced parsley
