Boil and cool the eggs. Peel them and cut them in half, lengthwise. Place the yolks, lemon juice, mustard, unrefined salt and freshly ground pepper in a food processor then pulse until the mixture looks like a fine ground. Keep the food processor on and slowly add olive oil to the yolk mixture until everything is just incorporated and fluffy. Easy Assembly – Transporting prepared deviled eggs can be tricky, so if you have the convenience of assembling them once you get to your destination, here’s what you can do. Have the halved whites in one container, the filling in a sealed plastic bag, and the garnishes in separate small containers. Take along a pair of kitchen scissors as well.
When you are ready to put your masterpiece together, just arrange the whites on a tray, snip off the tip of one corner of the bag. Pipe the filling into the whites and then garnish away!
